- Decide what shapes you want to create with the machine and choose the attachment accordingly.
- Push the dough through a machine and place individual cookies on a baking sheet lined with baking paper.
- Bake for approximately 7-8 minutes until edges are lightly browned.

Christmas vanilla-almond cookies

Ingredients:
- 3 cups plain flour
- 1 cup of sugar
- 1 cup of butter
- 1 egg
- 3/4 teaspoon of vanilla extract
- 1/2 teaspoon of almond extract
- 2 teaspoons of baking powder

Method:
- Preheat the oven to 160°C.
- Mix flour and baking powder, set aside.
- In another bowl, mix the sugar and butter
- Add eggs and vanilla and almond extract to their mixture.
- Gradually add the flour mixture and mix until just combined.
- On a floured surface, roll out the dough to a thickness of about half a centimeter and cut out stars or other desired shapes.
- Place the almond cookies on a baking sheet lined with parchment paper.
- Put the whole tray in the freezer for 5 minutes. This step is important so that the cookies keep their shape.
- Bake in the preheated oven for 10-12 minutes, until the edges are lightly golden.
- Allow cookies to cool completely before decorating.

Almond cookies from Linz

Ingredients:
- 2/3 cup almonds
- 1/2 cup sugar
- 2 and 1/2 cups plain flour
- 1 cup of butter
- 1 egg
- 1/2 teaspoon baking powder
- 1/2 teaspoon of salt
- 1/4 teaspoon ground cinnamon
- 1 teaspoon of vanilla extract
- marmalade of your choice
- 1 tbsp powdered sugar
Method:
- Preheat the oven to 160°C.
- Spread the almonds on a baking sheet and roast them for 6 to 8 minutes, stirring occasionally, then leave to cool.
- In a food processor, process the almonds and 1/4 cup sugar until the almonds are finely ground.
- In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon.
- Using an electric mixer, beat the butter and remaining sugar.
- Stir in the egg and vanilla.
- Reduce the speed to low and gradually add the almond mixture and then the flour mixture, mixing until just combined.
- Divide the dough in half, wrap in foil and refrigerate for three hours.
- Preheat the oven to 160°C.
- On a lightly floured surface, roll out each part of the dough to a thickness of about a quarter of a centimeter.
- Use the cutters to cut out the desired shapes of Linze cookies.
- Place on a baking sheet lined with baking paper and place in the preheated oven.
- Bake for approximately 10-12 minutes until golden.
- Leave to cool and then cover with your favorite marmalade and sprinkle with powdered sugar.

Almond Flour Snowballs
These delicious balls literally melt in your mouth. A very interesting candy in the shape of snowballs. Try it, you will see that there is nothing complicated about it!
Ingredients:
- 2 cups plain flour
- 1 cup almond flour
- 16 tablespoons of butter
- 1/2 cup powdered sugar
- 1/2 tbsp lemon or orange peel
- 1 teaspoon of vanilla extract
- 1/2 teaspoon of salt
- powdered sugar for coating
Method:
- Preheat the oven to 200°C and line the trays with baking paper.
- In a stand mixer fitted with an attachment, beat the butter, powdered sugar and vanilla extract until smooth.
- Gradually mix in plain flour and salt.
- After mixing, add a cup of almond flour and lemon or orange peel.
- Mix until everything is well combined.
- If the dough is too sticky, add a little more flour.
- Then shape the dough into balls approximately one centimeter in size.
- Place them on the prepared baking sheet a little apart from each other.
- Bake for approximately 11-13 minutes, or until the bottom and edges are lightly golden.
- Remove the almond cookies from the pan and let cool for 5 minutes.
- In the meantime, fill a bowl with icing sugar and roll the still warm balls in it.

Ingredients:
- 200 grams of blanched almonds
- 2 cups plain flour
- 100 g of butter
- 1/4 cup honey
- 1 egg
- 1 teaspoon of baking powder
- 1 tbsp gingerbread spice
Method:
- Preheat the oven to 160°C and line two trays with paper.
- Grind the almonds.
- Add the ground almonds, flour, baking powder and spices to the food processor. Quickly pulse them together.
- Cut the butter into pieces and put it in the food processor as well.
- Process until mixture resembles breadcrumbs.
- With the mixer running slowly, add the honey and beaten eggs.
- Then roll out the resulting dough with a rolling pin and cut stars out of it using cutters.
- Transfer the almond cookies to a baking sheet.
- Bake for approximately 15 minutes.

Ingredients:

Method:
- Preheat the oven to 150°C.
- Place the butter and sugar in a large bowl using a hand mixer and beat.
- Reduce speed and gradually add flour and ground almonds.
- Knead into a dough, wrap in cling film and put in the fridge for 15-20 minutes.
- Using a dough spoon, shape cookies into various shapes and place them on baking sheets and parchment paper.
- Bake for 13-15 minutes until the almond cookies are lightly browned.
- Leave to cool and in the meantime melt the chocolate in a water bath.
- Then dip the sugar into it from one side and decorate with sprinkles.

- 2 cups shredded coconut
- 400 ml of condensed milk
