Method:
- Preheat the oven to 220 degrees and prepare a muffin tin, placing a paper cup of the appropriate size in each hole.
- Sift flour with baking powder into a bowl, add sugar, salt and mix.
- We take out another bowl, put buttermilk, eggs, oil, vanilla extract into it and beat until foamy.
- Pour the egg mixture into the dry ingredients and mix gently to combine all the ingredients.
- It is important not to mix the mixture too much, otherwise the muffins will be unnecessarily hard or worse, like chewing gum, and we don’t want that.
- Using a spoon or a small ladle, divide into individual holes of the muffin tin. We only fill up to 3/4.
- Decorate the surface with blueberries and sprinkle with a little cane sugar.
- Place in a preheated oven and immediately reduce the temperature to 180 degrees.
- Bake for about 25 minutes until golden. When we insert a toothpick into the muffin, it should come out clean.
- Remove the finished muffins from the oven and let them rest in the mold for 10-15 minutes.
- Only then do we transfer them to the kitchen grid and wait until they cool down completely.

Banana Muffins
If the recipe is to be really successful, you need well-ripened bananas, ideal ones that already have an almost brown skin and are, so to speak, overripe.
Ingredients:
- 70 g of melted unsalted butter
- 195 g plain flour
- 100 g natural sugar
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- 1/4 teaspoon sea salt
- 3 ripe medium bananas
- 1 L-sized egg
- 1 teaspoon of vanilla extract
- 130 g of chocolate chips
Method:
- Peel the bananas, put them in a bowl and mash them thoroughly with a fork.
- Preheat the oven to 180 degrees. Place paper cups in the individual holes of the muffin tin.
- Mix flour, natural sugar, baking powder, baking soda and salt in a large bowl.
- Put the melted butter, mashed bananas, eggs, vanilla extract in another bowl and beat until the mixture is lighter and foamy.
- Pour the banana mixture into the bowl with the dry ingredients and stir gently with a fork so that the ingredients are mixed, but the dough is not mixed too much.
- Finally, carefully stir in the chocolate chips.
- Fill the muffin cups only 3/4 full with the finished dough and place in the preheated oven.
- Bake for about 20 to 25 minutes. Use a skewer to test if they are cooked enough.
- After removing the muffins from the oven, let them rest for about 15 minutes and then transfer them to a kitchen rack to cool completely.
- If you want, you can dust them with sugar before serving, decorate with heavy cream or leave them as they are.

- 315 g of milk chocolate chips
- 2 L-sized eggs
- 185 g of full-fat sour cream
- 120 ml of vegetable oil
- 120 ml whole milk
- 2 teaspoons of vanilla extract
Method:
- Preheat the oven to 200 degrees and prepare the mold and muffins, placing a paper cup in each hole. If we don’t have cupcakes, spray the mold with kitchen spray.
- Put flour, sugar, cocoa, baking soda, salt, chocolate chips in a large bowl and mix carefully. Let’s put it aside for now.
- Prepare another bowl, beat the eggs into it, add oil, sour cream, milk, vanilla extract and beat until everything is combined.
- Pour the liquid mixture into the dry ingredients and mix with a rubber spatula or wooden spoon until all the ingredients are combined.
- Using a spoon and a rubber spatula, fill the finished dough into the individual holes of the mold and place in the preheated oven.
- Bake for 5 minutes at a temperature of 200 degrees, then reduce the temperature to 170°C and bake for another 15 minutes. Use a skewer to check if the muffins are cooked in the middle.
- When they are ready, take them out of the oven and let them rest for 10 minutes, even in the form. Then take them out and let them cool.
- At room temperature, it lasts for a maximum of 4-5 days, in the refrigerator for about 1 week.

Carrot cakes

- 1 and 1/2 cups semi-coarse flour

- Put the vegetable oil, cane sugar, eggs, vanilla extract in the second bowl and beat very thoroughly. Finally, stir in the grated carrot.
- Add the dry mixture and mix until all the ingredients are combined into a smooth dough.
- Divide the dough into muffin tins, filling each hole only about 2/3 full.
- Place in the preheated oven and bake for approx. 20-22 minutes. The skewers must be clean when inserted and pulled from the center.
- Remove from the oven, set aside for 5-10 minutes and then transfer to a kitchen rack to cool.
- Once the muffins have cooled, we can serve them.
- If we put them in an airtight container, they can be stored in the fridge for up to 14 days. Maximum 3 days at room temperature.
Tip: If we want a muffin as a warm breakfast, heat it in the microwave for 15-30 seconds. After removing, put a piece of fresh unsalted butter on top, drizzle with maple syrup and it’s done.
