You will need:
Dough:
- 350 grams of plain flour
- 20 grams of powdered sugar
- a little salt
- 200 grams of butter
- 1 egg
- 2 tablespoons of cold water
Filling:
- 2 tablespoons of lemon juice
- 1.5 kilograms of apples
- 150 grams of powdered sugar
- 55 grams of butter
- ½ teaspoon of cinnamon
- a pinch of nutmeg
- 1 egg
Preparation process:
- Mix sifted flour, sugar and salt in a bowl.
- Add the cold butter and use your hands to work it into a loose mixture – the mixture should still be loose in nature, similar to cornmeal.
- Add eggs to the mixture and mix the dough.
- Wrap the dough in cling film and place in the fridge for at least one hour.
- Meanwhile, prepare the pie filling.
- Peel the apples, remove the cores and cut into eighths.
- Place the apple pieces in a bowl and drizzle with lemon juice.
- Then add sugar to the apples and mix.
- Melt the butter slowly in a pan.
- Add the apples and cook, stirring constantly, until the sugar is completely dissolved.
- Then cook the mixture for another two minutes.
- Reduce the heat to a simmer and let the apples bubble until they soften and release their juices.
- Once the apples are done, strain them and return the apple juice to the pan.
- Heat it until it starts to thicken and caramelize – about 10 minutes.
- Finally, mix the apples with the juice, cinnamon and nutmeg.
- Divide the dough in half.
- Roll out a sheet about 30 centimeters wide from each half.
- Place one sheet on a baking sheet or cake pan lined with baking paper so that the dough extends 1 centimeter over the edge.
- Put the apple filling on the prepared dough and sprinkle it lightly with powdered sugar.
- Brush the top edges of the dough with egg.
- Place the second sheet of dough on top of the filling and cover it with the overhanging edges of the dough.
- Finally, brush the entire cake with egg and sprinkle with powdered sugar.
- Don’t forget to pierce the apple pie in at least 5 places so that the steam can escape freely.
- Bake at 190 degrees Celsius for about 50 minutes.

You will need:
- 5 spoons of semi-coarse flour
- 4 tablespoons of powdered sugar
- 1 vanilla sugar
- 4 eggs
- lemon peel

You will need:
- 1 sheet of puff pastry
- 2 pieces of apples
- 2 eggs
- 200 milliliters of lukewarm milk
- 130 grams of cottage cheese
- 50 grams of granulated sugar
- ground cinnamon, brown sugar and chopped pistachios for sprinkling and decoration
Preparation process:
- First, preheat the oven to 200 degrees and turn on the upper and lower racks.
- Roll out a sheet of puff pastry so as to spread it into a round mold with a diameter of 22 centimeters.
- Carefully pierce the dough with a fork all over the surface.
- Cover it with baking paper and you can use, for example, dried chickpeas to weigh down the dough during baking – it must not puff up.
- Bake for 8 minutes.

- Add grated cottage cheese and lukewarm milk.
- Stir the mixture well to combine all the ingredients.
- Add half of the apples to the mixture and stir.
- When the dough is ready, pour the curd mixture evenly over it.
- Top with the remaining apple slices and sprinkle with brown sugar, cinnamon and chopped pistachio pieces.
- Reduce the oven temperature to 180 degrees and bake for about 35 minutes – until the surface is browned.

Apple filling:
- 4 medium-sized apples
- 240 milliliters of water
- 30 grams of granulated sugar

- 360 milliliters of whipping cream

Preparation process:
Dough:
- Mix sifted flour, sugar and salt in a bowl.
- Grate the butter – preferably frozen – into this loose mixture.
- Just mix this mixture lightly to form lumps.
- Add 4 tablespoons of water and stir – this will moisten the mixture slightly.
- Gradually add the water a tablespoon at a time and work the dough quickly.
- Wrap the resulting dough in cling film and put it in the fridge overnight.
- The next day, preheat the oven to 200 degrees.

- Stir until the mixture thickens.
- Finally, add the vanilla extract and rum to the mixture.
- Pour the entire mixture into a glass bowl and cover with plastic wrap – place it directly on top of the mixture to prevent peeling.
- Place the cooled mixture in the refrigerator overnight.
Apple filling:
- Prepare the apples – peel them, remove the cores and cut them into cubes.
- Place the apples in a saucepan with 120 milliliters of water.
- Sprinkle 2 tablespoons of sugar and cover the pot with a lid.
- Cook over medium-high heat and bring to a boil.
- Add the cinnamon and cook, stirring occasionally, until the apples are soft, about 15 minutes.
- As soon as the water from the pot evaporates, add the remaining water – the apples must not burn.
- Blend the boiled apples.
- Put the resulting apple mixture back into the pot and cook – you can add sugar and cinnamon to taste.
- Mix cream and cornstarch in a bowl.
- Add this loose mixture to the applesauce and cook over medium-high heat until bubbling.
- Then cook for another 30 seconds and let the mixture cool to room temperature.
Finishing:
- Remove all prepared parts from the refrigerator.
- First, spread the custard cream evenly on the baked body and the prepared filling on it.
- Place back in the fridge.
- Meanwhile, prepare the whipped cream.
- Beat the cream with the sugar into a thick cream.
- Then spread the top layer of the cake with whipped cream, sprinkle with cinnamon and put it back in the fridge for a while.
- The apple pie is ready, you can serve it.
