Apple Cream Cheese Coffee Cake

Coffee Cake is one of the most requested breakfast, brunch and snacking cakes for many families. Using Do You Bake's fan favorite coffee cake mix and a few added ingredients, you can turn this already delicious cake into a gourmet masterpiece. Your friends and family will think you slaved for hours creating this delicious creamy and apple infused cake.

Preheat oven to 350 ̊ F.
  1. Grease a tube pan.
  2. In a medium bowl toss apples with the lemon juice; set aside. For the streusel mixture, in a medium bowl combine the content of your cake mix topping bag with the melted butter; set aside.
  3. In a large bowl, combine the butter, cream cheese, yogurt and apple sauce and beat on a medium speed with a hand held mixer until light and fluffy.  Add in the eggs, one at a time, alternating with the sour cream and beating after each addition. Add apple sauce, lemon zest and vanilla.
  4. Mix in the content of the large bag (your cake mix) until well combined.
  5. Spread ½ of this batter in the pan. Arrange ½ of the apple slices evenly on top of the batter and sprinkle ½ of the streusel mixture over the apples.
  6. Spread on the rest of the batter, top with the apple slices and sprinkle with the remaining streusel mixture.  Bake 45-50 minutes or until a toothpick inserted near the center comes out clean.  Remove pan from oven and place on wire rack. Let cake cool for at least and hour, before carefully removing from pan.
