What will we need
- 300 g plain flour
- 2 teaspoons of soda
- 2 eggs
- 285 ml buttermilk
- 4 tablespoons of milk
- 85 g of melted butter
- 2 small apples (peeled, cored and grated)
- 50 g of dried cranberries
- Maple syrup
- 85 g of softened butter
- 0.5 teaspoons of salt
- 1 teaspoon of cinnamon
- 2 teaspoons of powdered sugar
Method
- To make cinnamon butter, mix 85g of softened butter, a pinch of salt, a teaspoon of cinnamon and 2 teaspoons of caster sugar.
- Then wrap the mixture in cling film, form a roll and leave to cool.
- Mix flour, baking soda and a pinch of salt in a bowl.
- Make a well in the middle and gradually beat in the eggs, followed by the buttermilk, milk and melted butter.
- Once the mixture is smooth, stir in the grated apples and cranberries.
- Melt some butter in a non-stick pan.
- When the pan is hot, add the batter.
- Cook for 2-3 minutes until bubbling and the bottom is set and golden.
- Turn and cook for a few more minutes.
- Transfer the apple fritters to a plate, cover with baking paper and keep warm.
- To serve, stack the fritters on a plate, top with a generous dollop of cinnamon butter and drizzle with maple syrup.

Fritters with caramelized apples

- 300 g plain flour
- 150 g granulated sugar
- 100 ml of milk
- 1 tablespoon of sunflower oil
For caramelized apples
- 50g of butter
- icing sugar
- 3 peeled apples (sliced)
- 100 ml Advocaat eggnog (or other eggnog)
- lightly whipped heavy cream
Method
- In a large bowl, beat the eggs, add the flour, sugar and milk and beat until smooth. The batter should be thick enough to slowly fall off the spoon.
- Heat a little sunflower oil in a frying pan over medium heat.
- Add the batter and bake the fritters.
- You can turn the fritters when the bubbles rise to the surface.
- Flip the fritters and cook for about two minutes.
- For the caramelized apples, heat the butter in a small saucepan over medium heat. If your apples are very sour, add a little powdered sugar to the butter and cook until the sugar dissolves.
- Add the chopped apples and cook, stirring occasionally, until soft and golden brown.
- Pour in half of the Advocaat and allow to bubble and reduce.
- Serve fritters topped with apples, dusted with powdered sugar and remaining Advocaat with a dollop of whipped cream.
