Apple Cinnamon Muffins

Ingredients:

On a small scale:

  • ⅔ cup semi-coarse flour
  • ¼ cup cane sugar
  • 1 teaspoon of ground cinnamon
  • 5 tablespoons of softened butter

For the dough:

  • 1 cup plain flour
  • 1 cup semi-coarse flour
  • 1 teaspoon of baking powder
  • ½ teaspoon of soda
  • ½ teaspoon of salt
  • 1 teaspoon of ground cinnamon
  • ⅛ teaspoon cloves
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ground ginger
  • ½ cup softened butter
  • 1 cup cane sugar
  • 2 large eggs
  • 1 and ½ teaspoons of vanilla extract
  • 1 and ½ cups peeled and cut apples into smaller pieces

For the frosting:

  • ½ cup powdered sugar
  • 1 and ½ spoons of whole milk
  • ½ teaspoon of vanilla extract

Method:

  • Mix the ingredients to a crumb.
  • Mix all the dry ingredients for the dough together.
  • Using a mixer, mix the butter and sugar until fluffy (about 2 minutes).
  • Then add the eggs one at a time and beat.
  • Add the vanilla extract and beat again.
  • Add the loose ingredients to the whipped mixture and mix carefully.
  • Fill a buttered and floured muffin tin ¾ full with the batter and sprinkle with breadcrumbs.
  • Bake at 220°C for about 5 minutes, then reduce the temperature to 175°C and bake for another 10-15 minutes.
  • Pour the glaze over the still warm muffins (you just need to beat the ingredients for it).

Healthy muffins with apples and yogurt

Looking for some healthy snacking inspiration? How about trying apple muffins without sugar? But don’t worry, they’re sweet. They are sweetened with maple syrup or honey.

Ingredients for 12 muffins:

  • 1 and ¾ cup whole wheat flour
  • 1 and ½ teaspoons of baking powder
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon of baking soda
  • ½ teaspoon of salt
  • 1 cup grated apple
  • 1 cup diced apples
  • ⅓ cup coconut or olive oil
  • ½ cup honey or maple syrup
  • 2 eggs
  • ½ cup Greek yogurt
  • ½ cup applesauce (see tip below)
  • 1 teaspoon of vanilla extract

Method:

  • In a bowl, mix all the dry ingredients, i.e. flour, baking powder, baking soda, cinnamon, salt and add the grated and chopped apples.
  • Whisk maple syrup or honey and oil together, add eggs, applesauce, yogurt.
  • Sprinkle the loose ingredients into the liquid and mix.
  • Grease a muffin tin with butter and sprinkle with flour. Fill them with dough up to ¾.
  • Bake at 220°C for about 13-16 minutes.
  • If you have any muffins left, feel free to put them in the freezer. It will last there for up to 3 months.

Tip: How to make applesauce? Peel the necessary amount of apples and cut them into cubes. Boil them in a small amount of boiling water until soft (you can add a little sugar and cinnamon), then blend them with an immersion blender. Another option is to use an apple snack.

  • Set ¼ cup of this crumble aside for sprinkling and mix in 1 teaspoon of cinnamon and 2 tablespoons of cane sugar.
  • Add chopped apple and nuts to ⅔ of the crumbs.
  • Beat the eggs and milk together, add to the crumble with the apple, nuts and mix thoroughly.
  • Pour the batter into the muffin tin ¾ full and sprinkle with breadcrumbs.
  • Bake at 205°C for about 15-20 minutes.

Apple Oatmeal Muffins

Ingredients for 12 muffins:

  • 1 and ½ cup diced apple + ¼ cup for sprinkling
  • 2 tablespoons of flour
  • 1 teaspoon of cinnamon
  • ½ cup of ripe mashed banana
  • ¾ cup of sugar
  • ½ cup vanilla almond milk
  • ⅓ cup softened coconut oil
  • 1 teaspoon of vanilla extract
  • 2 teaspoons of cinnamon
  • 1 teaspoon ground nutmeg
  • 1 cup plain flour
  • 2 teaspoons of baking powder
  • pinch of salt

Method:

  • Mix the banana, sugar, milk, oil, cinnamon and nutmeg.
  • Add flour mixed with baking powder and a pinch of salt.
  • If the dough is too stiff, add a little extra milk.
  • Fill greased and lined muffin tins with the finished dough.
  • Top with ¼ cup apples for garnish.
  • Bake in a preheated oven at 205°C for about 15-18 minutes.

Gluten free muffin recipe
