- 1 medium avocado
- 2 eggs
- 1 teaspoon of olive oil
- ½ teaspoon of dried garlic
- ½ spoon of lemon juice
- 1 tablespoon sour cream (optional)
- 2 tablespoons chopped fresh coriander
- 2 tablespoons of finely chopped spring onion
- salt and pepper
Method:
- Have your eggs hard-boiled.
- Meanwhile, hollow out the avocado and mash with a fork.
- Add to it a cooled egg grated with a grater or blended in a blender.
- Add the other ingredients and mix thoroughly.

Avocado spread on sandwiches

Ingredients:
- 1 and ½ avocados
- 4 tablespoons of virgin olive oil
- 2 teaspoons Dijon mustard

- 2 cloves of garlic
- ⅓ teaspoon pepper
- ½ teaspoon of sea salt
Method:
- Scrape the skins off the avocados and put them in a blender.
- Add all other ingredients and blend until smooth.
- Leave to cool in the fridge for a while and you can serve.

- 1 avocado
- 1 can of chickpeas
- ½ cup finely chopped red onion

Method:
- Scrape the avocado into a bowl and add the drained chickpeas.
- Mash both with a potato masher.
- Add onion, chopped herbs and season with salt.

- 3 avocados
- ½ onion
- 2 Roma tomatoes
- 3 tablespoons chopped fresh coriander
- 1 jalapeno pepper (can be sterilized, but feel free to leave it out completely)
- 2 cloves of garlic
- juice of 1 lime
- ½ teaspoon of salt
Method:
- Cut your avocado, remove the skin and pit.
- Mash it with a fork to the desired consistency. (Some like structure more, some less).
- Add finely chopped onion, tomatoes, pepper, coriander and crushed garlic.
- Drizzle with lime juice and season with salt.
- Mix and it’s done.
