Ingredients

  • 2 large tomatoes, sliced
  • 1/2 small red onion, sliced
  • 1/2 cup Feta cheese, crumbled into pieces
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped mint

For the dressing

  • 3 tablespoons of virgin olive oil
  • 1 and 1/2 tablespoons of red wine vinegar
  • 1/2 teaspoon of salt
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon ground black pepper

Method

  1. Slice the tomatoes and arrange them in a single layer on an oval serving plate.
  2. Arrange the sliced red onion on top of the tomatoes.
  3. Add freshly chopped parsley and mint.
  4. Add pieces of quality Feta cheese.
  5. Mix all the dressing ingredients in a shaker, shake to mix well and pour over the salad.
  6. Serve immediately.

Tomato salad with arugula and parmesan

  • 2 large handfuls of arugula

Ingredients

  • 4 cups halved cherry tomatoes
  • 2 cups fresh mozzarella, cut in half

Ingredients

  • 2 avocados, sliced
  • 250 g red cherry tomatoes, halved
  • 1 salad cucumber, sliced
  • 1 Jalapeño, seeded and sliced
  • 1/3 cup red onion, sliced
  • 1 or 2 boiled eggs, quartered
  • chopped fresh cilantro
  • 1 spring onion, sliced

For the topping:

  • 1/3 cup olive oil

Method

Tomato salad with cheese sauce

Try a delicious salad with a warm and rich cheese sauce, fresh and roasted tomatoes and crispy garlic croutons. Original, tasty and yet very simple!

Ingredients

  • 8 large cherry tomatoes
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon of thyme leaves
  • 1/8 teaspoon of sugar
  • salt
  • two thick slices of bread
  • 1 clove of garlic, halved
  • 1/4 cup mushroom or vegetable broth
  • 100 g of sliced Brie or Camembert
  • 2 large tomatoes, 1 finely chopped, the other thinly sliced
  • basil leaves for garnish
  • sea salt for garnish

Method

  1. Preheat the oven to 150°C.
  2. Bring a large pot of water to a boil and fill a large bowl with ice water.
  3. Using a sharp knife, make an X on the bottom of each cherry tomato.
  4. Blanch until the skin starts to peel off the tomatoes, about 30 seconds.
  5. Transfer the tomatoes to an ice bath to cool, then peel them.
  6. Place the peeled tomatoes on a rimmed baking sheet.
  7. Drizzle with 2 tablespoons of oil, sprinkle with thyme and sugar and season with salt.
  8. Roast the tomatoes for 1 hour until they are very soft but not too shriveled.
  9. Leave to cool.
  10. Meanwhile, heat the remaining 2 tablespoons of oil in a pan.
  11. Add the bread and toast it over low heat until golden brown on both sides, about 3 minutes.
  12. Transfer to a plate and rub a clove of garlic on both sides.
  13. Make bite-sized croutons.
  14. In a small saucepan, bring the stock to a boil.
  15. Put the cheese in a blender, add the broth and blend until the mixture is completely smooth.
  16. Pour some of the warm cheese fondue on the plates, pile fresh tomatoes, roasted tomatoes and croutons on top.
  17. Garnish with basil and sea salt and serve.

Method

  1. Cut 3 tomatoes and a cucumber into pieces and half an onion into thin slices.
  2. Mix the prepared vegetables in a medium bowl.
  3. In a small bowl, mix 3 tablespoons of mayonnaise, 2 tablespoons of sour cream, 1 pressed clove of garlic and pepper.
  4. Mix well.
  5. Mix the dressing into the vegetables.
  6. Add salt to taste just before serving.

What tomatoes are best for salads?

There are many different types of tomatoes and each is suitable for something different. We will look at tomatoes that are suitable for salads.

  • Cherry tomatoes – they are small and round, similar to a cherry, hence their name. Ideally, we choose them for salads, whether red, yellow, orange or purple. Their taste is spicy and sweet, and in addition to using them in a salad, you can also grill or cook them.
