A tasty and hearty lunch full of proteins and vitamins that will give you energy for the rest of the day.

Ingredients:

  • 4 medium-sized zucchini
  • 300 g of chicken breast
  • 100 g of bacon
  • 1 clove of garlic
  • 1/2 cup Italian dressing
  • 1/2 cup grated cheese, such as Gouda or Eidam
  • salt pepper

Method:

  1. Preheat the oven to 200°C.
  2. In the meantime, cook the chicken breasts.
  3. Mix chicken pieces, bacon pieces, pressed garlic, salt and pepper in a bowl.
  4. Cut the washed courgettes in half and remove part of their pulp so that you have space for filling.
  5. Fill the courgettes with the prepared mixture and place them in a baking dish or baking pan.
  6. Sprinkle the zucchini with grated cheese and cover the bowl or baking tray with aluminum foil.
  7. Bake covered in the preheated oven for approximately 20 minutes.
  8. Then remove the foil and bake for another 5 minutes until golden.

Stuffed baked zucchini with minced meat and vegetables

In addition to the meat mixture, ground meat can also be used for filling. Other vegetables, especially tomatoes and peppers, will give this variant a specific taste.

Ingredients:

  • 2 medium-sized zucchini
  • 300 g of ground beef
  • 1 onion
  • 1 clove of garlic
  • 1 tomato
  • 1 bell pepper
  • 5 tablespoons of tomato puree
  • 150 g of mozzarella
  • oregano
  • thyme
  • salt pepper

Method:

  1. Preheat the oven to 200°C.
  2. Fry finely chopped onion and garlic in oil in a pan.
  3. Then add the minced meat and sauté it for a few minutes.
  4. Remove the excess fat from the pan and add tomato purée, tomato cut into small pieces, paprika and spices.
  5. Simmer for approximately 10 minutes.
  6. Remove the pan from the heat and stir half of the mozzarella into the mixture.
  7. Split the washed courgettes in half and hollow out part of the pulp so that there is a space into which you will put the prepared meat-vegetable mixture.
  8. Fill the zucchini with the mixture and place in a baking dish.
  9. Sprinkle with pieces of remaining mozzarella.
  10. Bake for about 25 minutes until the courgettes are tender.

Method:

  1. Preheat the oven to 180°C.
  2. Grease a baking dish with butter.
  3. Cut the washed zucchini into very thin slices, preferably with the help of a mandolin grater.
  4. Then lightly salt the individual slices and let them rest for a while on a paper towel to remove excess liquid.
  5. Then put the zucchini slices in a bowl and add finely chopped onion and pressed garlic to them.
  6. In another bowl, beat the eggs and mix them with olive oil.
  7. Pour the egg and oil mixture into the bowl with the zucchini.
  8. Add the flour, baking powder, both types of cheese and all the spices.
  9. Mix the mixture carefully until the ingredients are combined.
  10. Then put the mixture into the prepared baking dish.
  11. Bake for approximately 55-60 minutes.

Serve garnished with fresh parsley.

Zucchini slices baked with potato and scallions

In addition to Niva, you can also prepare this dish using French Roquefort cheese or Italian gorgonzola, which will give it an even more intense taste.

Ingredients:

  • 2 large potatoes
  • 2 zucchini
  • 250 g of Niva cheese
  • 150 ml cooking cream
  • 100 g Greek yogurt

  • 4 tablespoons of butter
  • 2 tablespoons parmesan
  • 1 clove of garlic
  • oregano
  • thyme
  • fresh basil
  • salt pepper

Method:

  1. Preheat the oven to 180°C.
  2. Cut the washed tomatoes into slices, place them on a paper towel, sprinkle lightly with salt and cover the top with another layer of paper towel
  3. Press gently to release excess liquid from the tomatoes.
  4. Cut the washed zucchini in half.
  5. Mix the melted butter with all the spices to taste.
  6. Afterwards, spread the resulting seasoned butter on the top surface of the zucchini.
  7. Sprinkle half of the grated cheese over the courgettes.
  8. Place the tomato slices, from which you have removed the excess liquid with the help of salt, on top of the cheese.
  9. Then sprinkle with the remaining cheese.
  10. Mix the remaining seasoned butter with the parmesan cheese and breadcrumbs and sprinkle this mixture over the top of the zucchini.
  11. Bake for approximately 30 minutes.

Serve the baked zucchini prepared in this way, garnished with fresh basil leaves.

Zucchini pudding with cheese and cream

Ingredients:

  • 1 large zucchini
  • 2 tablespoons of butter
  • 1/2 onion
  • 2 cloves of garlic
  • 1/2 cup whipping cream or cream

  11. Cover the bowl or baking pan with foil and place in the preheated oven.
  12. Bake for approximately 15 minutes.
  13. Remove the foil from the bowl or baking tray and sprinkle with the remaining amount of cheese and parmesan.
