Method
- Preheat the oven to 165 degrees C.
- Mix the flour, baking powder, baking soda and salt in a bowl.
- Grease the cake tin and sprinkle with flour.
- Beat the butters, Hera, brown sugar, and white sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be lighter in color.
- Add the bananas and then the eggs.
- Beat in 2 teaspoons of vanilla extract together with the eggs.
- Gradually add the milk and flour mixture and mix until everything is incorporated.
- Add the pecans.
- Pour the batter into the prepared form.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 1 hour and 20 minutes.
- Meanwhile, prepare the frosting.
- Heat the butter, brown sugar, white sugar, 1 teaspoon vanilla extract, and heavy cream in a saucepan over medium heat.
- Stir until the sugars have dissolved, then cook gently for 1 minute.
- Pour over the inverted baked banana cake.

- 200 g butter (softened)
- 400 g plain flour
- 4 ripe bananas
- 200 ml of maple syrup
- 25-50 ml of milk
- 150 g of powdered sugar
- 4 free-range eggs
- 2 teaspoons of baking powder
- 100 g pecans (coarsely chopped)
- 200 ml thick cream
Method
- Preheat the oven to 170 degrees.
- Grease the cake pan with butter and sprinkle with flour.
- Blend the bananas until they are roughly chopped, then add the maple syrup and blend to a smooth paste.
- Pour in up to 50ml of milk and mix again if necessary to get a smoother consistency.
- In a large bowl, cream together the butter and sugar until pale and fluffy.
- Add eggs.
- Add the baking powder, flour, mashed bananas and three-quarters of the pecans to the bowl.
- Gently mix the mixture until combined.
- Pour the banana muffin mixture into the prepared mold. Then sprinkle with the remaining chopped pecans.
- Bake for 45-60 minutes, or until the top is golden brown and a skewer inserted into the center of the cake comes out clean.
- Leave the cake to cool in the tin for 10 minutes, then turn out onto a wire rack and leave to cool completely.
- Meanwhile, bring the cream and remaining maple syrup to a boil in a saucepan. Continue to cook for 3-5 minutes or until the mixture thickens slightly, then set aside to cool completely.
- Before serving, brush the top of the banana cake with maple syrup. Let stand for 10 minutes, then slice and serve.

Method
- For the frosting, place the chopped chocolate in a heatproof bowl.
