Banana bun with cream frosting

A soft dessert is the best thing we can have with afternoon coffee or perhaps with tea in the morning. Sometimes a little more demanding preparation doesn’t hurt if the result is worth it.

Ingredients:

For the dough:

  • 3 large ripe bananas
  • 3 cups semi-coarse flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of ground cinnamon
  • 1/2 teaspoon of salt
  • 2/3 cubes of softened unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 3 L-sized eggs
  • 3 teaspoons of vanilla extract
  • 1 1/2 cups buttermilk

For the cream frosting:

  • 1 package of full-fat cream cheese (250 g)
  • 1/2 cube of softened unsalted butter
  • 3 cups of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1/8 teaspoon salt

Method:

  • We start by preheating the oven to 180 degrees and wiping out a baking pan, ideally a cake pan.
  • In a bowl, mash the bananas with a fork or with a hand mixer.
  • Put flour, baking powder, baking soda, cinnamon and salt in another bowl, mix and set aside for now.
  • In the bowl of a food processor, beat the butter at the highest speed until it is smooth and creamy for about 1 minute. Sprinkle both types of sugar and beat on high speed for 2 minutes.
  • Add the eggs and vanilla to the butter and beat again on medium speed to combine everything.
  • Add the butter mixture to the bananas in the bowl and mix. Add the dry ingredients to the stand mixer with the buttermilk and mix with a hand mixer at medium speed.
  • The dough will be thicker and lumps may form, but this is not a problem at all. Transfer it to the prepared form and bake for 45-50 minutes.
  • As soon as the bun is baked in the middle, we can take it out and let it cool. In the meantime, prepare the frosting.
  • Put the cream cheese and butter in a bowl and mix at the highest speed using a hand mixer until the mixture is smooth and creamy.
  • Sprinkle sugar, salt, add vanilla and beat for 30 seconds at low speed. Then we set the highest speed and let it beat for 2 minutes.
  • If you want a thicker frosting, add another 1/4 cup of powdered sugar. Spread the finished glaze on the cooled bun and put it in the fridge to cool for 1 hour.

Banana bun with cottage cheese

Buchta is a grateful candidate for every occasion. When we are in a hurry, we can have it for breakfast in the morning, or take it to work as a snack, or enjoy it with an afternoon coffee. But it can also be a gift for a loved one who likes to snack and is not very good at baking.

Ingredients:

  • 2 cups semi-coarse flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon fine sea salt
  • 1 cup granulated sugar
  • 1/2 cube of fresh unsalted butter
  • 250 g of cottage cheese
  • 3 spoons of vanilla pudding
  • 2 eggs
  • 2 – 3 teaspoons of vanilla extract
  • 160 ml of milk
  • 2 ripe bananas

Method:

  • We start by preheating the oven to 170 degrees and grease the mold and sprinkle it with flour. If you want, you can put baking paper instead.
  • It is important that all the ingredients are at room temperature before we even start processing them.
  • Place the butter and sugar in a bowl and beat with a hand mixer until light and fluffy.
  • Add vanilla extract, eggs and beat well. Gradually start adding flour mixed with salt and baking powder. We turn the mixer on low so that it does not beat so quickly.
  • Add mashed bananas, cottage cheese and pudding with a fork and mix gently with a wooden spoon to combine everything.
  • Pour the dough into the prepared mold and tap it several times with the bottom on the table.
  • Place in the preheated oven and bake for approx. 25 to 30 minutes. We check how the dough is cooked with a skewer and if it doesn’t stick, we’ve won.
  • Take the finished bun out of the oven onto a wire rack and let it rest for 10-15 minutes. Then we turn the mold upside down and tap the cake onto the kitchen grid. We will let it cool down.
  • We can add sugar or decorate with chocolate coating, but it is not necessary, because the bun is great even without anything.

Eggless vegan cake

A healthy banana bun can be just as tasty as the classic one, you just have to know how to prepare it and, above all, use the right ingredients in the best possible ratio.

Ingredients:

  • 4 large ripe bananas
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • 1 pinch of salt

  • 2/3 cup of sunflower oil
  • 2 teaspoons of vanilla extract
  • 1 handful of halved walnuts
  • 1 handful of dried fruit (raisins, papaya, etc.)

Method:

  • The first step is to preheat the oven to 180 degrees and line a baking tray with baking paper.
  • Put the bananas in a bowl and mash them thoroughly with a fork. Add sugar, oil, vanilla extract and mix until the sugar dissolves completely.
  • Mix the wholemeal flour, baking soda, baking powder and salt in another bowl and then mix it into the wet ingredients.
  • Add chopped walnuts and dried fruit and mix again.
  • Transfer the dough to the baking form, gently tap it on the table top, smooth the dough and place it in the preheated oven.
  • Let it bake for about 45-50 minutes. When the bun starts to brown quickly, cover it with aluminum foil or baking paper.
  • To check, stick a skewer into the middle part. If we pull it out clean, it’s baked.
  • Remove the finished bun from the oven and carefully turn it out of the mold. If you want, you can let it rest for a few minutes first, so that it is not so hot when you tip it out.
  • Then just cut and serve.

Tip: This bun goes perfectly with a chocolate or lemon glaze and a luxurious homemade cocoa as a drink.

Caramel dessert with the aroma of bananas

If you want to surprise your loved ones or friends with a luxurious dessert that is somewhat reminiscent of an English dessert, then definitely reach for this delicious banana bun with topping.

Ingredients:

Dough:

  • 1 3/4 cups semi-coarse flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/4 teaspoon salt
  • 1/2 cup melted lukewarm butter
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 3 ripe bananas
  • 2 tablespoons of fresh lemon juice
  • 2 teaspoons of vanilla extract

Caramel Sauce:

  • 1 1/4 cups whipping cream
  • 1/2 cup brown sugar
  • 1/2 cup corn syrup
  • 4 tablespoons of unsalted butter
  • Pinch of salt

Method:

  • We start with the oven, which we preheat to 180 degrees. We will also prepare a higher baking tray, in which we will put baking paper.
  • In a medium bowl, mix the flour, baking soda, salt and baking powder.
  • Put the butter and sugar in another bowl and beat with a hand mixer.
  • Add the bananas, which we mash with a fork on a plate or in a small bowl, lemon juice, vanilla extract, eggs and mix thoroughly.
  • At low speed, mix in the flour mixture and mix until the dough is smooth. Pour the dough prepared in this way into the baking pan, smooth it out and bake for 35 minutes.
  • In the meantime, prepare the sauce. Bring the whipping cream, brown sugar, corn syrup, butter and salt to a boil over medium heat and let it cook, whisking constantly, until all the sugar has completely dissolved.
  • Lower the heat and let the sauce thicken at a gentle boil. We do not forget to stir regularly. Thickening takes about 15 minutes.
  • The consistency of the sauce should resemble maple syrup, and will thicken even more as it cools.
  • Remove from the heat, let it stand for a while and take the baked bun out of the oven, which we let rest for 30 minutes.
  • Then cut it into pieces (9 squares or 12 rectangles) and always pour sauce over each piece on a plate. Garnish with pecans and sliced bananas.
  • If you want, you can add a little maple syrup or chocolate topping.
