Ingredients:
- 2-3 pieces of beef bones
- 500g of beef ribs
- 3 pieces of medium-sized carrots
- 1 piece of celery
- 2 medium onions
- 3 bay leaves
- 3 cloves of garlic
- 8-10 pieces of whole pepper
- 3-4 sprigs of fresh parsley
- 1 tsp dried thyme
- 1 tsp dried oregano
- 2 tablespoons of salt
Method:
- Clean the vegetables and cut them into larger pieces (onions in half, celery in half and carrots in pieces).
- Rinse the meat and bones with water and place in a large pot.
- Add chopped vegetables.
- Pour enough water.
- Add garlic, spices, salt and bring to a boil.
- Let it simmer for at least 2.5 hours on low heat.
- Take out the spices. Cut the meat and vegetables.
- Put the chopped meat and vegetables back into the broth.

- 1.5 kg of beef bones

- 150g of beef liver
- 4.5 tablespoons of breadcrumbs

- 50g of bacon
- 1 dry roll

Method:
- Clean the vegetables and cut them into larger pieces.
- Rinse the beef bones.
- Place the bones and vegetables in a pot and cover with enough water.
- Add spices and salt to taste.
- Bring to a boil and simmer for at least 2.5 hours.
- Cut the liver and bacon into small pieces and grind the mixture together with the garlic and the roll in a bowl.
- Season to taste with salt, pepper and marjoram.
- Add egg and breadcrumbs.
- Mix everything well and let it rest for at least 10 minutes.
- After 10 minutes, shape the dumplings and put them in boiling water (not in the broth).
- Place the freshly cooked dumplings in the finished, cooled broth.

Method
- Put the cleaned meat and vegetables in a pot of cold water.
- Add onion, garlic, allspice, pepper, bay leaf and salt.
- Boil for at least an hour and a half.
- Then drain and cut the meat and vegetables.
- Put the chopped ingredients into the finished broth and add the chopped mushrooms.
- Season with pepper or salt to taste.
- At the end, sprinkle with chopped parsley and cook for a while longer.
- In another pot, boil the hair noodles in salted water.
- Put the drained noodles in a deep plate and pour over the finished soup.

How to store beef broth?
If you want to keep the broth for a longer period of time, there is the option of freezing it. It will last up to 6 months in the cold.
After cooking it, you just have to wait until it cools down and remove all the solidified fat. Then boil again to concentrate and let cool again. You can freeze the broth in any resealable plastic container.
