Try this easy birthday cake with fruit that will just leave the dust. You can choose any fruit. However, strawberries, raspberries, blackberries and blueberries are the best.

Ingredients for the body

  • 3.5 cups plain flour
  • 1 cup softened butter
  • 1.5 cups of sugar
  • 1.4 cups of milk (heated)
  • 3 eggs
  • 1/4 cup oil
  • 1.5 teaspoons of vanilla extract
  • 4 teaspoons of baking powder
  • 1/2 teaspoon of salt

Cream ingredients

  • 250g of cream cheese
  • 250g of mascarpone
  • 2 cups of powdered sugar
  • 2 cups whipping cream
  • 1.5 teaspoons of vanilla extract
  • 2/3 cup raspberry or strawberry jam
  • 1/4 cup of water
  • 4 cups of fresh fruit (strawberries, blackberries, raspberries or blueberries) + for decoration
  • 2 teaspoons of lemon zest
  • 2 tablespoons of lemon juice


  • Grease two cake tins and sprinkle with flour. Or line with baking paper. Preheat the oven to 180°C.
  • In a large bowl, use a hand mixer to beat the butter and sugar until creamy. Then stir in the vanilla extract. Using a fork, mix the milk, egg, oil and set aside. In a separate bowl, mix the flour with baking powder and salt.
  • Add 1/3 of the dry ingredients to the butter mixture and mix until combined. Add half of the milk mixture and mix.
  • Next, mix in another 1/3 of the dry ingredients and then the rest of the milk mixture. Finally, mix in the rest of the dry ingredients and divide the dough evenly between the two baking forms.
  • Bake for 30 minutes, let rest for 5 minutes, then transfer to a wire rack to cool completely.
  • In a large bowl, whip the cream with the vanilla extract.
  • In a separate mixing bowl, mix the cream cheese with the mascarpone, then mix in the powdered sugar. Let the mixture sit in the fridge.
  • Meanwhile, mix the fruit berries in a bowl, add the lemon zest and juice. Mix well.
  • Next, mix the jam with water and put in the microwave until it dissolves – about 30 seconds.
  • Cut each cooled carcass in half to make four layers. Spread 1/3 of the jam filling on the bottom layer, then a layer of cream on top and finally 2/3 of a cup of fresh fruit.
  • Continue layering the cake in the same way – jam, cream and fruit. Spread the top last layer with the remaining cream.
  • Decorate the cake with any other fruit and you’re done.

  • First, preheat the oven to 170°C. Grease and flour two cake tins.
  • Beat the egg yolks with sugar in a bowl, add oil, water and beat until frothy.
  • Then add flour mixed with baking powder.
  • Whip the egg whites until stiff and also work them into the dough.
  • Pour the resulting dough into the prepared cake molds and bake for 40-50 minutes.
  • In the meantime, beat the cottage cheese with powdered sugar, vanilla sugar (or extract) and sour cream. Prepare the hardener according to the instructions and mix it into the cream. Remove 2/3 of the cream into which you mix the strawberry jam.
  • Spread the cooled carcasses with strawberry-curd cream. Spread the remaining cream without jam on the surface of the cake.
  • Decorate the cake as desired with strawberries or whipped cream and serve.

  • 220 g semi-coarse flour
  • 140 g frozen leaf spinach or fresh baby spinach
  • 2 large eggs
  • 125 g granulated sugar
  • 100 g of oil

  • 5 g of lemon juice
  • pinch of salt

  • 250 g of mascarpone

  • First, thaw the spinach, then drain it and blend it into a fine puree. Add the egg yolks, vanilla extract and lemon juice. Blend. Then add oil and mix again.
  • In a separate bowl, mix the sifted flour with the baking powder.
  • In another bowl, beat the egg whites with salt. Gradually add sugar and mix so that the snow is still just stiff.
  • Then mix the dry ingredients with the spinach puree. Finally, mix in the snow in parts as well.
  • Pour the finished dough into the prepared mold and bake at 180°C for about 55 minutes. Test with a skewer to see if it’s done. Leave to cool on a wire rack.
  • In the meantime, prepare the cream by mixing all the ingredients together.

  • Add the sugar a little at a time, continuing to beat until stiff peaks form. It takes about 5-8 minutes.
  • Add the cornstarch, vinegar and vanilla sugar. Whisk.
  • Put the mixture in a large pastry bag and make 9 or 10 equal sized scoops on the baking paper. With the back of the spoon, make small indentations on each scoop.
  • Bake for 1 hour and 15 minutes. Then turn off the oven, but do not open it. Let it cool in the oven for at least an hour.
  • In the meantime, make the cream. In a bowl, whip cream with sugar and almond extract until stiff peaks form. Put in the fridge.

Ingredients for the base

  • 400 g biscuits (e.g. bebe)
  • 160 ml of milk

Ingredients for the filling

  • 560 g of cottage cheese in a tub
  • 320 ml of whipping cream
  • 100 g of powdered sugar
  • 1 teaspoon of vanilla extract

Ingredients for the frosting

  • 120 ml whipping cream
  • 100 g dark chocolate for cooking


  • In a large bowl, mix the cottage cheese with the powdered sugar and vanilla extract. Beat until smooth, then add the cream and beat until creamy.
  • Dip the cookies in milk and place them on the bottom of the mold. Then spread half of the cream on top of the cookies.
  • Next, place another layer of soaked cookies and top with the remaining cream cheese. Finally, place the last layer of soaked cookies.
  • Cover the cake with cling film and refrigerate for at least 2-3 hours, preferably overnight.
  • To prepare the topping, heat the cream in a small saucepan over low heat and remove it from the heat before it reaches the boiling point. Then break the chocolate into the hot cream and let it stand for about 3 minutes.
  • Then, using a whisk, whip up the chocolate frosting, which you pour over the aged cookie cake.
  • Let the finished cake sit for another hour so that the chocolate frosting hardens.

Ingredients for the body

  • 180 g semi-coarse flour
  • 90 g of powdered sugar
  • 100 ml of vegetable oil
  • 2 eggs
  • 2 tablespoons of Dutch cocoa
  • 1 packet of baking powder
  • 125 ml of milk

Ingredients for the filling

  • 500 ml whipping cream
  • 2 stiffeners
  • 50 g of powdered sugar
  • 3 bananas
  • 70 g of cooking chocolate


  • Beat the egg yolks with sugar and oil in a bowl. Gradually add flour mixed with cocoa and baking powder.
  • Next, beat the milk and finally mix in the snow whipped from the egg whites.
  • Pour the resulting dough into a greased and lined cake tin and bake at 180°C for approx. 30 minutes.
  • Allow to cool completely after baking. Then form a circle of approx. 1.5 cm around the perimeter of the cooled body and hollow out the inside in the shape of a pool/bowl. Do not break the bottom of the barrel. Set the hollowed out pieces aside, you will need them.
  • Prepare the filling by mixing the sugar, stiffeners and grated or chopped chocolate. Next, whip the whipped cream and then mix it into the mixture and whip it.
  • Cut the bananas lengthwise and place them in the hollowed-out casing. Then spread the filling on them and form a mound like a molehill.

How to keep the cake fresh until the party?

Are you planning to bake a cake, or have you already baked it and want it to stay nice and fresh until the party? We will advise you on how to store all kinds of cakes and desserts so that you do not embarrass yourself with a spicy treat.

First, we will imagine the storage of marzipan cakes and classic desserts. We usually store them in the refrigerator. Never, however, put it at the back of the fridge, but rather at the front. Always keep them packed preferably in a paper box and so that they stand straight. It is true that cakes with marzipan and butter creams can last in the fridge for several days, and it is even said that they taste even better later, as they are spread out.

However, we recommend that cakes with whipped cream be consumed quickly, within two to three days at the most, so that they do not spoil. You can even freeze marzipan cakes. Carefully wrap them in food film or a special bag and in a year you can enjoy them as fresh.

Never leave cakes out of the fridge for a long time. Always return them to a cool place after cutting. However, do not forget that cakes absorb odors from other foods. Therefore, remove all aromatic foods from the fridge, such as cottage cheese, salami, sausages, etc.
