- 2 and 1/2 cups plain flour
- 4 eggs
- 1 cup of butter
- 2 and 1/2 cups of water

- 1 cup dried apricots
- 2 cups of candied fruit
- 1 cup walnuts
- 1 cup raisins
- 1 teaspoon of baking powder
- 1 and 1/2 teaspoons of vanilla extract
Method:
- Preheat the oven to 160°C and grease and fill the mold for the bishop’s sandwich.
- Boil the raisins and dried apricots with water and a quarter of a cup of sugar in a pan for about 30 minutes, stirring occasionally.
- Leave to cool.
- In the meantime, mix the melted butter with the cottage cheese, vanilla extract and the remaining sugar.
- Add eggs to their mixture and mix thoroughly.
- Then add the cooled mixture of raisins and apricots.
- Mix again and mix in the flour and baking powder a little at a time.
- Finally, add candied fruit and nuts.
- Mix and then put the dough into the prepared form.
- Bake for approximately 55 minutes.

Grandma’s bishop’s sandwich

Ingredients:
- 250 g plain flour
- 4 eggs
- 275 g of butter
- 240 g of sugar
- 85 g of raisins
- 40 g of almonds
- 60 g of candied fruit
- 60 g of candied citrus peel
- 1/2 teaspoon baking powder
- 1/2 teaspoon lemon juice
- 1/2 teaspoon of vanilla extract
- 1/2 teaspoon of orange juice
- pinch of salt
Method:
- Preheat the oven to 160°C.
- Grease and empty the baking dish.
- Cut the fruit and raisins, grind the almonds and mix in a bowl.
- In another bowl, first mix the butter with the sugar, then add the eggs.
- Mix and gradually add the sifted dry ingredients.
- At the end, add lemon juice, orange juice and work into a dough.
- Mix candied fruit with raisins and almonds.
- Transfer the dough to the mold.
- Bake for approximately 2 hours.

Bishop’s cup sandwich with fruit, nuts and dates
A rich sandwich whose exceptional taste is made up of a mixture of candied fruit, nuts and spices. If you wish, you can make the taste and smell even more special by adding brandy or rum.
Ingredients:
- 3 cups plain flour
- 1 cup of butter
- 2 cups brown sugar
- 1 cup molasses
- 2 cups candied or dried fruit
- 1 cup walnuts
- 1 cup raisins
- 1 cup dried dates
- zest and juice of one lemon
- rind and juice of one orange
- 1 and 1/2 teaspoons of baking powder
- 1/4 teaspoon salt
- 1 teaspoon of cinnamon
- 1/2 teaspoon nutmeg
Method:
- Preheat the oven to 150°C.
- Prepare the form in which you want to bake the bishop’s sandwich, grease it thoroughly and sprinkle it with coarse flour.
- Mix the flour, baking powder and all the spices in a bowl.
- In another bowl, mix the sugar with the warmed butter.
- Mix the contents of both bowls and also add molasses, lemon and orange peel and juice.
- Cut nuts, raisins, dates and fruit into smaller pieces and then mix them into the dough.
- Bake slowly for approximately 2 to 2 1/2 hours.
