Brown sugar topping

  • 100 g of brown sugar
  • 70g chopped walnuts (or pecans)
  • 1 teaspoon of ground cinnamon

For muffins

  • 220 g plain flour
  • 1 teaspoon of baking soda
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 115 g of butter
  • 100 g granulated sugar
  • 50 g of sugar
  • 2 large eggs
  • 120 g sour cream (or white/vanilla yogurt)
  • 2 teaspoons of pure vanilla extract
  • 60 ml of milk at room temperature
  • 250 g of fresh or frozen blueberries


  • Preheat the oven to 220°C. Grease a muffin tin or use cupcake liners.
  • Mix all the ingredients for the glaze together.
  • In a large bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Beat the butter, granulated sugar and brown sugar.
  • On medium speed, add the eggs one at a time.
  • Add sour cream and vanilla extract until combined.
  • With the mixer running on low speed, add the dry ingredients and milk to the wet ingredients and beat.
  • Stir in the blueberries.
  • Pour the dough into the molds.
  • Add a teaspoon of the brown sugar and nut mixture to each muffin.
  • Bake for 5 minutes at 220°C, then reduce the oven temperature to 180°C.
  • Bake for an additional 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • The total time these muffins will bake is about 23-25 minutes.
  • Let the muffins cool in the muffin pan for 5 minutes.

What will we need

  • 2 large eggs
  • 240 g of yogurt
  • 115 g of melted butter
  • 200 g of granulated sugar
  • grated rind from 1 lemon
  • 1 teaspoon of vanilla extract
  • 2 teaspoons of baking powder
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon fine sea salt
  • 300 g plain flour
  • 300 g of blueberries
  • 2 1/2 tablespoons brown sugar for dusting


  • Preheat the oven to 190°C.
  • Wash the blueberries, dry with paper towels and set aside.
  • Prepare a muffin tin and line it with 12 cups.
  • In a large bowl, add the eggs, yogurt, butter, sugar, lemon zest, vanilla, baking powder, baking soda, and salt. Whisk until well combined.
  • Add the flour.
  • Add the blueberries (reserve a few for garnish).
  • Divide batter evenly between 12 muffin cups.
  • Put the reserved blueberries on the dough, press them lightly into the dough. Sprinkle with brown sugar.
  • Bake for about 25 minutes, until a skewer comes out clean.

  • 375 g plain flour
  • 3 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 220 g of white sugar
  • 1/4 teaspoon salt
  • 250 ml of buttermilk
  • 60 g of butter
  • 65 ml of vegetable oil
  • 2 large eggs
  • 2 teaspoons of vanilla extract
  • 250 g of blueberries


  • Preheat the oven to 200°C. Line the muffin tin with paper cups.
  • In a bowl, whisk together the flour, baking powder, baking soda, sugar and salt.
  • In a separate bowl, whisk together the buttermilk, melted butter, oil, egg and vanilla.
  • Make a hole in the bowl with flour, pour the egg mixture into it.
  • Mix until combined.
  • Mix in most of the blueberries – save some for garnish.

Cottage cheese muffins with blueberries

What will we need

  • 100 g of softened butter
  • 140 g of golden powdered sugar
  • 2 large eggs
  • 140 g of cottage cheese
  • 1 teaspoon of vanilla extract
  • 2 tablespoons of milk
  • 250 g plain flour
  • 2 teaspoons of baking powder
  • 1 teaspoon baking soda
  • 125g pack of blueberries


  • Preheat the oven to 200 degrees and line a muffin tin with paper cups.
  • Beat the butter and powdered sugar together.
  • Add the eggs and beat for 1 minute, then stir in the cottage cheese, vanilla extract and milk.
  • Mix the flour, baking powder and baking soda in a bowl with ¼ teaspoon fine salt, then stir it into the wet ingredients.
  • Finally, mix in the blueberries and divide the mixture into muffin cups.
  • Bake for 5 minutes, then reduce the oven to 180 degrees and bake for a further 15-18 minutes, until golden and a skewer inserted into the center comes out clean.
  • Leave to cool in the tin for 10 minutes, then carefully remove.

How to decorate muffins?

Once your cupcakes are baked and the frosting is ready, it’s time to decorate. Here are 5 techniques to try, from the simplest to the most advanced.

Technique #1: No pastry bag needed

How to decorate: Use a large tablespoon to scoop about 1 1/2 to 2 tablespoons of frosting onto the cupcake. Use the back of a spoon, a non-serrated butter knife, or a small spatula to spread the frosting to the edge and remove any excess. With a slight pressure of the tool on the icing, move in a spiral from the outer edge to the center of the cupcake, which will create a nice wave at the end.

Technique #2: The classic spiral

How to decorate: Use a pastry bag with a closed or open star tip and fill it with frosting. Starting at the outer edge of the cup, begin to squeeze the cream towards the center of the cup, using even and continuous pressure on the bag. Finish circling the center of the cup by releasing the pressure and lifting the tip slightly as you approach the center.

Another option is to start circling in the center of the cup and work your way to the edge. Both techniques will create slightly different spirals.

Technique #3: Zig Zag

How to decorate: Tip your piping bag with a petal (it looks like a teardrop) and fill it with frosting. Hold the cup in your non-dominant hand at about a 45 degree angle. Start with the tip at the top of the cup. Apply pressure to the pastry bag continuously as you move the tip back and forth, working your way to the bottom edge of the cupcake until the surface is completely covered.

Technique #4: Multi-colored frosting

How to Decorate: Use food coloring to tint two or three portions of the white frosting. Place each colored frosting in its own piping bag and only fill it about a third full. Place all three bags in one common large one, where you also place the closed star tip.
Pipe an initial dab of frosting onto a piece of parchment paper or practice cake. Not all colors may appear immediately. Once all the colors have come out of the tip, decorate as you wish.

Technique #5: Combination

How to decorate: Prepare several piping bags fitted with tips of different sizes and shapes. Start with the tip that is the largest. Next, switch to a medium tip and use a different design. The last element he can use are very small dots placed across all the elements that fill in all the empty spaces.
