- 3 handfuls of breadcrumbs

METHOD
- Wash the broccoli and divide it into florets.
- Cook until soft and chop finely.
- Add grated cheese and finely chopped ham.
- Stir in the eggs.
- We salt.
- Let’s pepper.
- For a thicker dough, we can sprinkle a little breadcrumbs.
- Roll the broccoli meatballs in breadcrumbs.
- Heat oil in a pan and fry until golden on both sides.

- 8 eggs
- 130 g oat flakes (blended)
- 130 g of hard cheese

METHOD
- Cut the broccoli into florets and cook until soft.
- Finely chop the broccoli.
- Mix in the oatmeal, egg and cheese.
- Season with pepper and salt.

Baked broccoli meatballs with parmesan

INGREDIENTS
- 200 g of broccoli
- ½ onion
- 1 egg
- 30 g of finely grated parmesan
- 30 g of grated gouda cheese
- 1 teaspoon of Italian herbs (rosemary, thyme, oregano, basil)
- Salt and pepper to taste
- 1 tablespoon of vegetable oil
METHOD
- Preheat the oven to 200°C.
- Cut the broccoli into small pieces.
- Put water in a large pot, bring to a boil and add the broccoli.
- Boil for about 2 minutes, then drain and cool in cold water.
- Finely chop the onion.
- Heat the oil in a pan and fry the onion on it.
- As soon as it turns vitrified, remove from heat and let cool slightly.
- Mix broccoli, both cheeses, onion, salt, pepper and herbs in a large bowl and mix well.
- Add eggs and make a sticky dough.
- We make small patties from the dough and place them on a baking sheet lined with baking paper.
- Bake for about 15 minutes, then turn the patties to the other side and bake for another 10-15 minutes.
- Remove from the oven and serve.
- They are delicious warm and cold.

These great green patties are perfect for veggie burgers. They hold their shape well and their taste is simply irresistible!
INGREDIENTS
- 300 g of frozen peas
- 150 g of curly cabbage
- 1/2 broccoli
- 1 stalk of celery stalks
- 1 onion
- 2 cloves of garlic
- 150 g oat flakes
- 150 g breadcrumbs
- 30 g ground walnuts
- 1 teaspoon of Italian herbs (oregano, basil, rosemary, thyme, sage and parsley)
- 2 teaspoons of soy sauce
- 1 tablespoon of mustard
- salt and pepper to taste
METHOD:
- Bring the water to a boil in a large pot.
- Add the cabbage and cook for 2 minutes.
- Then add the peas and cook for another 5 minutes.
- Add the broccoli and cook for 2 minutes.
- Drain immediately and immerse in cold water.
- Heat the oil in a pan and fry the chopped onion in it until translucent.
- At the end, add crushed garlic.
- Put the cooked vegetables in a food processor and add the celeriac stalks and blend until smooth.
- Stir in onion and garlic, breadcrumbs and nuts.
- Season with salt, pepper, soy sauce, herbs and mustard.
- We will make thicker meatballs.
- Heat the oil in a pan and fry the meatballs for about 3 minutes on each side.
- Serve immediately as part of a burger or just with your favorite dressing.

Fluffy broccoli-carrot meatballs
If you are looking for a recipe for delicious meatless meatballs, you will be delighted! Thanks to this tasty dish, you can include more vegetables in your menu and you will also enjoy it.
INGREDIENTS
- 500 g of carrots
- 4 tablespoons plain flour
- 3 eggs, separated
- 1 teaspoon pink Himalayan salt
- 1/4 teaspoon black pepper
- 1/4 cup Panko breadcrumbs (50 g)
- 1 cup flat-leaf parsley, roughly chopped
- sunflower oil for frying
METHOD
- Rinse the broccoli and carrots under running water.
- Peel the carrot and finely grate it.
- Roughly chop the broccoli and process it in a food processor.
- It will take less than a minute.
- Mix the blended broccoli, grated carrot, salt, black pepper, breadcrumbs, flour and egg yolks in a bowl.
- Beat the egg whites with an electric mixer until stiff.
- Mix the egg whites into the broccoli mixture.
- Fry each meatball for 2-3 minutes on each side.
- We use a little oil, just enough to cover the surface, and add more as needed during frying.
- Serve with a dip of your choice or as a side dish.

Broccoli and chicken pancakes

INGREDIENTS
For patties:
- 1 large broccoli, cut into florets
- 500g chicken breast or thigh fillets, cut into 0.8cm pieces
- 1/2 cup (75 g) plain flour
- 1/2 cup (50 g) parmesan cheese, grated
- 2 eggs
- 2 cloves of garlic, pressed
- 3/4 teaspoon salt
- pepper to taste
- 3-4 tablespoons of olive oil
For dip:
- 2/3 cup (165 g) sour cream or Greek yogurt
- 2 spoons of ketchup
- lemon juice
METHOD
- Preheat the oven to 100 degrees Celsius.
- Steam the broccoli until soft, then roughly chop it.
- Add the broccoli and the rest of the patty ingredients to the bowl, except for the oil in which we will fry, and mix well.
- Add enough oil to the pan.
- Heat to a medium-high flame.
- Pour 1/4 cup of the mixture into the pan and form a patty.
- Fry for 2.5 minutes until golden, then turn and fry for another 2 minutes.
- Transfer to a rack in the oven and keep warm.
- Mix the ingredients for the dip and serve with patties.
