  1. Wash the broccoli and divide it into florets.
  2. Cook until soft and chop finely.
  3. Add grated cheese and finely chopped ham.
  4. Stir in the eggs.
  5. We salt.
  6. Let’s pepper.
  7. For a thicker dough, we can sprinkle a little breadcrumbs.
  8. Roll the broccoli meatballs in breadcrumbs.
  9. Heat oil in a pan and fry until golden on both sides.

Diet Broccoli Patties

  • 500 g of broccoli
  • 8 eggs
  • 130 g oat flakes (blended)
  • 130 g of hard cheese
  • salt
  • pepper
  • 1 teaspoon oil for frying


  1. Cut the broccoli into florets and cook until soft.
  2. Finely chop the broccoli.
  3. Mix in the oatmeal, egg and cheese.
  4. Season with pepper and salt.
  5. We will make the dough.
  6. Fry the meatballs in a drop of oil on both sides.
  7. Serve with boiled potatoes or just plain.

Baked broccoli meatballs with parmesan

These raincoats are delicious and easy to make! And thanks to baking in the oven, it is also light and easy to digest. You can also try other types of cheese, broccoli goes well with stronger cheeses such as gorgonzola, niva or mature cheddar.


  • 200 g of broccoli
  • ½ onion
  • 1 egg
  • 30 g of finely grated parmesan
  • 30 g of grated gouda cheese
  • 1 teaspoon of Italian herbs (rosemary, thyme, oregano, basil)
  • Salt and pepper to taste
  • 1 tablespoon of vegetable oil


  1. Preheat the oven to 200°C.
  2. Cut the broccoli into small pieces.
  3. Put water in a large pot, bring to a boil and add the broccoli.
  4. Boil for about 2 minutes, then drain and cool in cold water.
  5. Finely chop the onion.
  6. Heat the oil in a pan and fry the onion on it.
  7. As soon as it turns vitrified, remove from heat and let cool slightly.
  8. Mix broccoli, both cheeses, onion, salt, pepper and herbs in a large bowl and mix well.
  9. Add eggs and make a sticky dough.
  10. We make small patties from the dough and place them on a baking sheet lined with baking paper.
  11. Bake for about 15 minutes, then turn the patties to the other side and bake for another 10-15 minutes.
  12. Remove from the oven and serve.
  13. They are delicious warm and cold.

Vegetarian Broccoli Pancakes with Peas

These great green patties are perfect for veggie burgers. They hold their shape well and their taste is simply irresistible!


  • 300 g of frozen peas
  • 150 g of curly cabbage
  • 1/2 broccoli
  • 1 stalk of celery stalks
  • 1 onion
  • 2 cloves of garlic
  • 150 g oat flakes
  • 150 g breadcrumbs
  • 30 g ground walnuts
  • 1 teaspoon of Italian herbs (oregano, basil, rosemary, thyme, sage and parsley)
  • 2 teaspoons of soy sauce
  • 1 tablespoon of mustard
  • salt and pepper to taste


  1. Bring the water to a boil in a large pot.
  2. Add the cabbage and cook for 2 minutes.
  3. Then add the peas and cook for another 5 minutes.
  4. Add the broccoli and cook for 2 minutes.
  5. Drain immediately and immerse in cold water.
  6. Heat the oil in a pan and fry the chopped onion in it until translucent.
  7. At the end, add crushed garlic.
  8. Put the cooked vegetables in a food processor and add the celeriac stalks and blend until smooth.
  9. Stir in onion and garlic, breadcrumbs and nuts.
  10. Season with salt, pepper, soy sauce, herbs and mustard.
  11. We will make thicker meatballs.
  12. Heat the oil in a pan and fry the meatballs for about 3 minutes on each side.
  13. Serve immediately as part of a burger or just with your favorite dressing.

Fluffy broccoli-carrot meatballs

If you are looking for a recipe for delicious meatless meatballs, you will be delighted! Thanks to this tasty dish, you can include more vegetables in your menu and you will also enjoy it.


  • 500 g of carrots
  • 4 tablespoons plain flour
  • 3 eggs, separated
  • 1 teaspoon pink Himalayan salt
  • 1/4 teaspoon black pepper
  • 1/4 cup Panko breadcrumbs (50 g)
  • 1 cup flat-leaf parsley, roughly chopped
  • sunflower oil for frying


  1. Rinse the broccoli and carrots under running water.
  2. Peel the carrot and finely grate it.
  3. Roughly chop the broccoli and process it in a food processor.
  4. It will take less than a minute.
  5. Mix the blended broccoli, grated carrot, salt, black pepper, breadcrumbs, flour and egg yolks in a bowl.
  6. Beat the egg whites with an electric mixer until stiff.
  7. Mix the egg whites into the broccoli mixture.
  8. Fry each meatball for 2-3 minutes on each side.
  9. We use a little oil, just enough to cover the surface, and add more as needed during frying.
  10. Serve with a dip of your choice or as a side dish.

Broccoli and chicken pancakes

This combination of juicy chicken and tender broccoli that forms a patty with a crispy golden crust is seriously delicious. See for yourself!


For patties:

  • 1 large broccoli, cut into florets
  • 500g chicken breast or thigh fillets, cut into 0.8cm pieces
  • 1/2 cup (75 g) plain flour
  • 1/2 cup (50 g) parmesan cheese, grated
  • 2 eggs
  • 2 cloves of garlic, pressed
  • 3/4 teaspoon salt
  • pepper to taste
  • 3-4 tablespoons of olive oil

For dip:

  • 2/3 cup (165 g) sour cream or Greek yogurt
  • 2 spoons of ketchup
  • lemon juice


  1. Preheat the oven to 100 degrees Celsius.
  2. Steam the broccoli until soft, then roughly chop it.
  3. Add the broccoli and the rest of the patty ingredients to the bowl, except for the oil in which we will fry, and mix well.
  4. Add enough oil to the pan.
  5. Heat to a medium-high flame.
  6. Pour 1/4 cup of the mixture into the pan and form a patty.
  7. Fry for 2.5 minutes until golden, then turn and fry for another 2 minutes.
  8. Transfer to a rack in the oven and keep warm.
  9. Mix the ingredients for the dip and serve with patties.
