- 300 g of oatmeal
- A teaspoon of ground cinnamon
- 60 g of butter
Method
- Preheat the oven to 160 degrees
- Cut the lychees in half
- Put them on the pan together with the pickle, plums, vanilla extract, butter and a spoonful of cane sugar
- Stir and bring the mixture to a boil
- Cover the pan and simmer on medium-high heat for about 3 minutes
- Remove from the heat and stir in the flakes, cinnamon and the rest of the sugar
- Pour out the mixture and spread it evenly on a baking sheet lined with baking paper
- Place in the oven and bake for about 30 minutes until the granola is golden
- Stir the mixture halfway through baking
- Take the granola out of the oven and let it cool completely
- Serve with fresh raspberries, yogurt or milk

Classic French almond croissants
Every classic French-style brunch must include a croissant. Serve them with marmalade, maybe a little cheese if you’re after a savory version. But for a truly sweet experience, it is best to fill it with high-quality almond butter or cream. This almond croissant recipe is a classic version of a breakfast pastry with an amazing filling and toasted almonds on top!
What will we need
- 4 teaspoons of dry yeast
- 60 ml of lukewarm water
- 420 g plain flour
- 60 ml of milk
- 40 g of granulated sugar
- 3 tablespoons melted butter (cooled)
- 2 teaspoons of salt
- 120 g butter (softened)
- 60 g of nut butter (or other sweet spread)
- Egg
- 2 tablespoons of milk
- 40 g of sliced almonds
- 2 spoons of powdered sugar
Method
- Mix the yeast with warm water and let it rest for 5 minutes
- Add bread flour, milk, sugar, melted butter and salt to the dissolved yeast and water
- We start mixing the dough, mix for about 2 minutes
- If the dough is too sticky, add a tablespoon more flour until the dough is firm enough to hold its shape
- Shape the dough into a ball and cover it with cling film
- Let the dough rest for 30 minutes at room temperature
- Roll the dough into a rectangle
- Then cover it with a towel and let it rise for 40 minutes
- Spread the risen and rolled dough with softened butter
- Then we fold the dough into thirds
- Roll the dough into a rectangle again and fold it into thirds again
- Cover it again with cling film and put it in the fridge for an hour
- We will then repeat the procedure once more
- Roll the dough again into a rectangle
- Using a sharp knife, cut the dough lengthwise in the middle to form two rectangles
- We cut each piece so that we have 10 pieces of dough
- Finally, we cut each piece in half diagonally to make 20 triangles
- Put a small teaspoon of peanut butter in the tip of each triangle and then roll up the triangle from the bottom and finally bend it to create a crescent shape
- Place the finished croissants on a lightly greased baking sheet so that they do not touch
- Cover them with plastic wrap and let them rise for 45 minutes until they almost double in size
- Meanwhile, preheat the oven to 160 degrees
- Beat the eggs with 2 tablespoons of milk
- Brush the surface of each croissant with egg and then sprinkle with chopped almonds
- Bake the croissants for 14 to 16 minutes, until they are puffed and the almonds are golden brown.
- Sprinkle the tops of the warm croissants with icing sugar
Croissants are best eaten fresh. If you have leftovers for the next day, you can revive them at least a little by reheating them gently in the oven for about 5 minutes.
If you would like to bake these croissants in the morning, you can prepare them the day before and refrigerate overnight, covered with cling film. Instead of letting them rise at room temperature, leave them in the fridge until morning and then proceed with the recipe.

What will we need
For basic porridge
- 60 g of oatmeal
- 60 ml of milk
- 60 ml of water

With bananas and nuts
- Sliced banana
- 2 tablespoons of walnuts

Method
- Heat the oil in a saucepan over medium heat
- Add chopped onion and celery and cook for 3-4 minutes, stirring constantly
- Then add capsicum and cook for another 4 minutes
- Add the garlic and cook until fragrant
- Add the tomato puree, beans and chopped tomatoes with 200 ml of water and mix
- Add Tabasco to taste and season well according to your preferences
- Bring the mixture to a boil, then reduce the heat and cook, stirring occasionally, for 10-15 minutes, until the sauce thickens slightly
- Preheat the pan to a medium-high temperature and crisp the bread on each side

What will we need
- 60 g butter (cut into cubes)

- 4 egg yolks

- Preheat the oven to 150 degrees
- Grease a large baking dish with cooking spray

- Remove the bacon slices from the pan and let them drain on paper towels to get rid of excess fat
- Leave one tablespoon of the bacon in the pan
- Pour the egg mixture into the pan and immediately reduce the heat to low

- 10 sweet waffles
- 700 g frozen coated chicken (see TIP)
- 8 eggs

Croque Madame
An iconic French-style breakfast. The croque madame dish is a sandwich made from brioche-type bread with a typical filling of cheese, ham, fried eggs and béchamel sauce. Eggs are served with the yolk facing up so that the yolk can run out when the sandwich is cut.
What will we need
On the béchamel
- 90 g of unsalted butter
- 30 g plain flour
- Teaspoon of salt
- A pinch of ground nutmeg
- 730 ml of milk
- 50 g of grated parmesan
Other ingredients
- A loaf of brioche (or toasted bread)
- 30 g grated hard cheese
- 8 slices of ham (cut into small pieces)
- 25 g of grated parmesan
- Butter (softened)
- 4 large fried eggs
Method
- For the béchamel, melt 6 tablespoons of butter in a non-stick pan
- Then whisk in the flour
- We continue to whisk and cook for 2-3 minutes so that the mixture is thick
- Slowly whisk in one half of the milk
- Allow the flour mixture to absorb the milk and then add the rest of the milk
- At first the flour mixture will look like a paste, but it will slowly thin out
- We continue to cook, about 5-8 minutes on medium heat, until the sauce thickens

- 2 tablespoons of olive oil

Method
- Add the olive oil to the pan and heat it over medium-high heat
- Do not overheat the oil, if it is too hot, the egg will cook immediately after hitting the pan and will be too hard
- Beat the eggs in a small bowl until foamy – it’s important not to add salt or pepper at this stage of the recipe
- Mix half of the cold butter into the eggs
- Add the remaining butter to the pan and swirl it together with the oil until it melts
- Pour the eggs into a hot pan and start cooking
- Whisk the eggs in small circles and zig-zags in the pan with a quick movement of a fork until the eggs are about 80% cooked
- Smooth the surface of the eggs with the back of a large spoon
- Season the eggs with salt and pepper to taste
- Sprinkle grated cheese and chopped herbs on top of the eggs and cover with a lid
- Turn off the stove and let the omelette cook for 2 to 3 minutes, depending on how hard you want the eggs to be
- Tilt the pan slightly to the side and carefully remove the omelette from the pan onto a warmed serving plate using a rubber spatula
