What will we need

  1. 450 g of smoked belly
  2. 450 g Madeta
  3. 360 g corn (drained)
  4. 360 g beans (drained)
  5. 370 g of canned tomatoes
  6. 25 ml of BBQ sauce
  7. A teaspoon of chili
  8. 30 g spring onions
  9. Jalapeno pepper (chopped)
  10. Tortilla chips or crackers

Method

  1. Cut the smoked belly into small pieces in a food processor
  2. We start mixing it until it is chopped into small pieces
  3. Transfer the chopped belly to the pan
  4. Add all the remaining ingredients to it and start cooking slowly at a low temperature
  5. Mix the ingredients together to melt the cheese
  6. Cook like this for about 30 minutes until the cheese melts
  7. When it’s melted, raise the heat slightly and cook for another 10 minutes until the cheese starts to bubble

  2. 250 g grated hard cheese
  3. 3 bush tomatoes (halved and cored)

  5. ½ onion (chopped)
  6. Jalapeno (chopped)
  7. Handful of coriander (chopped)
  8. 2 tablespoons lime juice
  9. Salt
  10. Pepper
  11. Olive oil

Method

  1. Coat the baking sheet with olive oil
  2. Spread the tomatoes, garlic, onion and jalapeno on it
  3. I put the tray in the oven and grill the vegetables at 200 degrees for about 15 minutes until they start to brown

Method

  1. 1 kg of pork belly
  2. Whole garlic
  3. A big onion
  4. 200 g lard (or butter)
  5. 4 spoons of mustard
  6. A spoonful of ground cumin
  7. 300 ml light beer

  10. Pepper

Method

  1. Preheat the oven to 180 degrees
  2. Salt and pepper the belly
  3. We crush the garlic and then rub it into the belly
