Cook in water or steam?

  • Some cook dumplings in water, others in steam.
  • One of the differences is the outer structure of the dumplings .
  • If you cook the dumpling directly in water, its outside will be sticky .
  • Steaming will give you a nice uniform texture with little cracks .
  • The cooking time of the dumpling , either in steam or in water, is also important.
  • If the dumplings are cooked too long, they will harden .
  • If we cook them and leave them in hot water or covered in a hot pot, the dumpling will shrink and harden .
  • First, remove the pot from the stove, then lift the lid and take out the dumplings.
  • There should be no deflation , the outer skin may shrink a bit, but not enough to change the actual structure of the dumpling.

Bread dumplings can be served with classic sauces, e.g. dill, tomato, cucumber. But they are also suitable for recipes with stewed cabbage with meat or many types of goulash .
