Sauerkraut meatballs

Luxurious sauerkraut pancakes are simple and quick. They fill you up perfectly and come in handy after a hard day. Enjoy them!

Ingredients

  • 300 g sauerkraut, well drained
  • 190 ml of milk
  • 1 large egg, lightly beaten
  • 1 teaspoon cumin
  • 1 teaspoon dried sage (optional)
  • 130 g plain flour
  • salt and ground black pepper to taste
  • vegetable oil or clarified butter

Method

  1. Finely chop the sauerkraut.
  2. In a medium bowl, whisk together the milk, egg, cumin, and salt, if using.
  3. Stir in the flour.
  4. Season with salt and pepper.
  5. Add sauerkraut and stir.
  6. Heat a thin layer of oil in a large skillet over medium heat until the small amount of batter added to the fat sizzles and splutters.
  7. Gradually add two spoonfuls of the mixture per pancake into the pan (you should be able to fit about four in the pan at a time).
  8. Spread with a fork into eight-centimeter rounds.
  9. Fry until the undersides are browned, about five minutes.
  10. Flip the patties and fry until golden, about five more minutes.
  11. Transfer to a paper towel to drain excess fat and season with salt.
  12. Repeat with the remaining batter, adding more oil to the pan as needed.
  13. Serve hot.

Cabbage patties with garlic dip

These Spicy Cabbage Pancakes are easy to make and taste great! In combination with a creamy garlic dip, you will really enjoy it.

Ingredients

For pancakes:

  • 500g cabbage, thinly sliced (see note #1)
  • 2-4 tablespoons of olive oil for frying
  • 1.5 cups plain flour
  • 1 spring onion, diced
  • 1 teaspoon of dried garlic
  • 1 teaspoon of dried onion
  • 2 teaspoons of Italian seasoning or dried parsley + oregano
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • 1/2 tsp pepper
  • optional: 1/2 teaspoon red chili flakes
  • 1 cup milk (any kind)
  • 4 eggs
  • 2 tablespoons of olive oil
  • 1 tablespoon lemon juice or lime juice

For the garlic dip:

  • 1/2 cup sour cream (or plain yogurt)
  • 1 tablespoon lemon or lime juice
  • 1/2 teaspoon dried garlic
  • 1/4 teaspoon salt and pepper (or to taste)

Method

  1. Thinly slice the cabbage, place in a bowl and mash with your hands to break it up and soften it a bit.
  2. Combine all dry ingredients in a large bowl and mix well.
  3. In a medium bowl, combine all the wet ingredients and whisk together, beat in the egg.
  4. Add the wet ingredients to the dry ingredients and whisk until combined.
  5. Add the chopped cabbage and mix until all the cabbage is mixed with the batter.
  6. You may need to use a fork if your whisk is silicone and too soft to mix the cabbage and batter together.
  7. Heat a tablespoon of olive oil in a large non-stick pan.
  8. Add about 1/4 cup of the batter to the hot oil and reduce the heat to medium-low.
  9. Fry for 4-5 minutes or until golden brown.
  10. Using a silicone spatula, carefully turn the pancakes and fry on the other side for 3-4 minutes or until golden.
  11. Remove the patties on a plate to cool, add a little olive oil and fry the rest of the patties as well.
  12. Combine all the dip ingredients in a small bowl and mix well.
  13. Serve with warm cabbage rolls.

Vegan greens

Try this ultimate recipe for fried vegan cabbage pancakes with carrots, turmeric and flax seeds. You will fall in love!

Ingredients

  • 2 tablespoons of flax seeds
  • 7 tablespoons of water
  • 500 g of cabbage
  • 200 g of carrots
  • 2 tablespoons plain flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of turmeric
  • salt and pepper to taste
  • frying oil

Method

  1. In a small bowl, mix the flax seeds with the water.
  2. Allow to thicken while preparing the vegetables.
  3. Wash the cabbage and peel the carrots.
  4. Then cut both into small pieces.
  5. Mix the chopped cabbage and carrots in a bowl with the flour, baking powder, turmeric and a generous pinch of salt and pepper.
  6. Add the flax seed mixture as well.
  7. Mix all the ingredients. (Mixture will be a little wet and sticky.)
  8. Shape the mixture into meatballs.
  9. Heat a pan with 3-4 tablespoons of oil.
  10. Carefully add the meatballs.
  11. Fry for 5 minutes until crispy and golden.
  12. Turn them over and fry until golden on the other side as well.
  13. After baking, place on a plate with paper towels to drain excess fat.
  14. Enjoy your meal!

Low-carb sauerkraut pancakes

Luxurious sauerkraut and vegetable patties with a low carbohydrate content will not only satisfy your taste buds, but are also healthy and nutritious. They are ready in just 20 minutes, so you can prepare them even if you don’t have much time.

Ingredients

  • 1/2 medium celery, shredded
  • 1 large carrot, grated
  • 1 large zucchini, grated
  • 1 cup drained sauerkraut
  • 1 small yellow onion, diced
  • chili flakes or any dried herbs to taste
  • 1/2 teaspoon sea salt
  • 4 medium eggs
  • 2 tablespoons butter, ghee or duck fat for frying

Method

  1. Put the celery and carrots in a bowl with water and a pinch of salt.
  2. Leave to soak for 15 minutes.
  3. Transfer to a muslin cloth along with the zucchini and sauerkraut.
  4. Squeeze out the water and juice from the sauerkraut.
  5. Discard the liquid.
  6. Put the drained vegetables in a bowl, mix with eggs, spices and chili flakes. Mix it up.
  7. Heat a little butter (about 1/2 tablespoon) for 3 patties (about 70g per patty) in a pan.
  8. Fry on low-medium heat for 5 to 6 minutes.
  9. Make sure the temperature is not too high so the pancakes don’t burn.
  10. Turn and fry for another 5 to 6 minutes on the other side.
  11. Repeat until all patties are done.
  12. Serve, for example, with watercress, other sauerkraut, avocado or crispy bacon or smoked salmon with cream cheese.

Japanese cabbage pancakes with sriracha mayonnaise

Do you want to try something new again? Then these Japanese cabbage patties with spicy mayonnaise are the right choice for you!

Ingredients

For the Sriracha Mayonnaise:

  • 4 spoons of mayonnaise
  • 2 tablespoons sriracha hot sauce
  • 1 tablespoon of lemon juice

For pancakes:

  • 2 extra large eggs
  • 120 ml of water
  • 1 and ½ spoons of soy sauce
  • 1 tablespoon of roasted sesame oil
  • 120 g plain flour
  • ½ head of cabbage, chopped
  • 1 carrot, peeled and grated
  • 3 spring onions, sliced
  • vegetable oil, for frying

Method

  1. In a small bowl, mix the mayonnaise, sriracha, and lemon juice.
  2. Stir to combine well.
  3. In a large bowl, whisk together the eggs, water, soy sauce, and sesame oil until smooth.
  4. Add flour a few tablespoons at a time, whisking constantly, until a thick, smooth dough is formed.
  5. Add the cabbage, carrot and spring onion to the dough.
  6. Mix well.
  7. Heat a drizzle of oil in a non-stick or cast-iron skillet over medium heat.
  8. Once heated, add a ladle of batter.
  9. Press onto the hot pan to form a circle about 1cm thick and cover with a lid.
  10. Fry for 3-5 minutes until golden, then flip and fry for another 3-4 minutes.
  11. Transfer to a warm plate and cover with foil.
  12. Keep warm while you prepare the remaining pancakes, adding more oil to the pan if necessary.
  13. Drizzle the sriracha mayo and sprinkle with chopped scallions.
