INGREDIENTS:

  • ½ cup finely chopped cabbage
  • 2 sweet potatoes
  • 1 cup quinoa
  • 1 teaspoon of thyme
  • 3 cloves of garlic
  • pepper

  • olive oil

METHOD:

  • Bake the sweet potatoes in their skins in the oven for about 40 minutes.
  • Cook the quinoa according to the instructions on the package.
  • Mash the baked sweet potatoes, add cooked quinoa, thyme, cabbage, pressed garlic, salt and pepper.
  • Mix the dough and form meatballs.

INGREDIENTS:

  • 2 cups of cooked cauliflower
  • 1 cup cooked quinoa
  • ½ cup shredded cabbage
  • ½ cup grated zucchini
  • ½ cup corn
  • 2 cloves of garlic
  • 2 eggs
  • ½ -1 cup breadcrumbs
  • ¼ -½ cup grated cheese
  • 1 teaspoon of salt

  • ½ large cabbage

Meatballs with cabbage can be combined with different types of vegetables, but also with meat or cheese. As you can see, we won’t even need flour to hold the dough together. It is enough to use breadcrumbs, often until the end, so that they are beautifully crunchy.

If you want to experiment, you can also use almond flour, which is gluten-free. You can also try crushed cornflakes for coating.

Cabbage is rich in B vitamins, but it is also a source of vitamins C, E, K and important minerals. It helps with beautiful skin and supports the formation of red blood cells.

If you want to avoid frying, it is ideal to choose preparation in the oven. A hot air fryer is also very useful, so if you have one at home, be sure to use it.
