- Pour oil into the pot and heat it.
- When the oil is hot enough, add all the vegetables and fry briefly.
- Pour the broth over the roasted vegetables and cook for about 8 minutes until the potatoes are soft.
- Once all the vegetables are cooked, we can pour the entire contents of the pot into a blender or we can blend the soup with a stick blender directly in the pot.
- Season the finished soup with freshly squeezed lemon juice, salt and pepper.

Cabbage soup with carrots and cheese

Ingredients
- 1 small onion
- 2 cloves of garlic
- 2 tablespoons of oil
- 800g of carrots
- 5 cups of broth
- 2 cups cabbage
- 1 cup grated cheese (cheddar is great)

Method
- Clean the carrots and cut them into small cubes.
- Heat oil in a large pot, add diced onion, pressed garlic and carrot. Fry the vegetables for about 5 minutes and add salt and pepper.
- Pour in the stock, lower the heat and cook until the carrots are soft, about 25 minutes
- Once the carrots are soft, blend the soup. We can pour it into a blender or we can use a stick blender.
- Add cabbage and grated cheese to the blended soup and cook on a low flame until the cheese melts and the cabbage softens.

Soup with cabbage and sausage
This quick soup recipe tastes great, but you’ll have it on the table in fifteen minutes.
Ingredients
- 1 tablespoon of oil
- 1 onion
- 1 sausage
- 4 cups cabbage
- 1 clove of garlic
- 1 teaspoon cumin
- 1 teaspoon of thyme
- 1 teaspoon sweet smoked paprika
- salt pepper
Method
- Cut the onion into small cubes and the sausage into rounds.
- Heat the oil in a medium-sized pot and add the onion and shortly after that the sausage. Sauté for two minutes, stirring constantly.
- Add paprika, salt, pepper, crushed garlic and fry for about half a minute until the spices start to smell.
- Add drained beans and diced cabbage and cover with broth.
- Cook until the cabbage is soft, about 5-7 minutes. Serve the soup immediately.

- 2 tablespoons of oil
- 1 small onion
- 4 cups cabbage
