A classic imperial jerk

This dessert is a great delicacy of Austrian gastronomy. If you go to a mountain hut, you can have Kaiserschmarren for dessert. You mean a pancake torn into pieces and served with a so-called fruit whim. Do not hesitate and try our recipes for pancakes .


For the dough:

  • 4 eggs
  • 125 g semi-coarse flour
  • 125 ml milk (it should be at room temperature)
  • Pinch of salt
  • 1 teaspoon of baking powder
  • 40 g of powdered sugar
  • 80 g of raisins
  • 4 tablespoons fresh unsalted butter

To sprinkle:

  • 1 tablespoon of powdered sugar


  • Prepare two bowls, separate the whites into one and the yolks into the other.
  • Add sifted flour, milk, salt, baking powder, sugar to the yolks and mix into a smooth dough.
  • Let it rest for 10 minutes and in the meantime prepare the egg white snow.
  • Beat the egg whites until stiff peaks form and carefully mix them into the dough.
  • Finally, mix in the raisins, just be careful not to break the snow.
  • Heat 2 spoons of butter in a pan, pour all the batter into it and fry the pancake on a medium flame until it is crispy.
  • Then turn the pancake over, add the remaining 2 tablespoons of butter and fry on the other side as well.
  • Transfer the still warm pancake to a plate and tear it into pieces.
  • Sprinkle with powdered sugar.

Kaiserschmarrn – imperial jerky with applesauce

This Viennese dessert will impress you with its unsurpassed aroma already during preparation. After all, pancake batter, raisins and apples are a great combination. You will delight your loved ones and at the same time caress the taste buds of everyone who tastes your creation.


For the dough:

  • 200 g plain flour
  • 30 g of granulated sugar
  • 1/4 teaspoon salt
  • 4 whole eggs
  • 300 ml of whole milk
  • 40 g fresh unsalted butter
  • 1 handful of raisins
  • 1 handful of blanched almonds
  • 1 tablespoon powdered sugar for sprinkling

For the applesauce:

  • 1 kg of apples
  • 80 ml of water
  • 2 bags of vanilla sugar
  • 2 tablespoons of granulated sugar
  • 1 stick of cinnamon
  • Juice from 1/2 chemically untreated lemon


  • Separate the yolk from the whites into two different bowls. Sift the flour into the bowl with the egg yolks, add sugar, salt, milk and make a smooth dough.
  • In the second bowl, beat the egg whites until stiff and very carefully mix them into the dough with a wooden spoon.
  • We will prepare a pan that can also be put in the oven and at a medium temperature we will melt and foam the butter in it so that it is really very hot.
  • We slowly start pouring the batter and using a spatula spread it over the entire pan in an even layer.
  • Let’s lightly brown both sides and in the meantime preheat the oven to 180 degrees.
  • Place the pan in the preheated oven and bake for about 10-12 minutes, until the surface is golden brown.
  • Remove from the oven and tear with a fork into pieces, which of course do not have to be the same size.
  • Add the raisins and almonds, mix and return the pan to the already switched off oven.
  • In the meantime, let’s start preparing the applesauce.
  • Wash, peel, quarter and remove all cores from the apples.
  • Bring water with vanilla sugar, granulated sugar and a cinnamon stick to a boil in a saucepan.
  • Cut the apples into small pieces, sprinkle them with lemon and put them in a pot of water, where we cook them on a low heat for about 15-20 minutes.
  • Set aside, remove the cinnamon and blend using a hand blender.
  • Divide the jerky onto a plate and add the sauce. It can be consumed warm or cold.

Austrian jerky in a pan

If you are a fan of sweet dishes, then you will love this recipe. It can be a great dinner, but also a snack for your offspring when they invite friends over to your house. The food is fast, tasty and above all absolutely simple.


  • 4 M-sized eggs
  • 125 g plain flour
  • 60 g of granulated sugar
  • Salt on the tip of the knife
  • 1 bag of bourbon vanilla sugar
  • 300 ml of whole milk
  • 75 ml of sparkling mineral water
  • 40 g fresh unsalted butter
  • 1 handful of raisins
  • 2 – 3 tablespoons of orange juice (can be apple juice as well)
  • Icing sugar for sprinkling


  • Place the raisins in a small bowl and cover with orange juice. Let it soak for 15 – 30 minutes.
  • Then we separate the yolks and whites separately. Add a pinch of sugar to the egg white and beat until stiff peaks form, which we will set aside for now.
  • Beat the egg yolks with granulated sugar, salt and vanilla sugar with a mixer to a smooth creamy consistency.
  • Now we mix in the raisins, which we have previously strained so that no liquid remains in them.
  • Finally, with the utmost care, mix in the egg whites.
  • Heat the pan to medium heat and melt the butter in it.
  • Pour all the batter into the heated pan and bake for about 5 minutes until golden.
  • Using a flipper, we regularly check from the side how the dough is cooked, so that the side that is toasted is not too brown.
  • Then divide the pancake into quarters with a turner, turn each one separately and fry until golden brown on the other side.
  • Then we tear it into pieces and let it fry for a while in the pan. Turn continuously with a turner and then set aside.
  • Serve immediately and dust the plate with powdered sugar. If you like, you can easily top it with maple syrup or chocolate topping.

Slovak jerk

This great dessert is not difficult to prepare, but still manages to put a smile on your face right after the first bite.


  • 500 ml of semi-skimmed milk
  • 3 eggs
  • 1 teaspoon of brown sugar
  • 100 g of raisins
  • 3 spoons of rum + 50 ml
  • Mineral as needed
  • 350 g coarse flour
  • 30 g of fresh unsalted butter
  • 1 large plum compote


  • We prepare a pot into which we pour the plum compote and liquid and bring to a boil over a low heat.
  • Let it cook for about 15 minutes, adding 50 ml of rum 5 minutes before the end. When enough juice has evaporated, remove from the heat and use a hand blender to blend until smooth.
  • Drizzle 3 tablespoons of rum over the raisins and let them infuse for 15 minutes.
  • Melt the butter and let it cool completely.
  • Separate the yolks from the whites and put them in two different bowls. Beat the egg whites until stiff peaks form.
  • Add brown sugar to the egg yolks and beat until foamy. Gradually start adding milk and flour.
  • Let the mixer run on medium speed and make a thicker dough.
  • Add the raisins without rum, mix, and finally add the egg whites bit by bit. Mix carefully so that the snow does not break.
  • Add butter to the dough, mix carefully for the last time and heat the oil in a pan.
  • Pour into the pan and bake until golden brown on both sides.
  • Using a pair of forks, tear the pancake into smaller pieces, sprinkle with powdered sugar and leave it in the pan to give the jerky a pleasant caramel flavor.
  • Put the jerky on a plate, sprinkle with a little more sugar and then pour the plum sauce over it.

Tip: If you are going to make jerky when plums are in season, just pit them, pour water, add granulated sugar and boil.

Cup sweet omelette

Imperial jerky can take many forms, but as something doesn’t need to be weighed, it’s really a big quickie. Spoons and cups are a great measuring tool these days without having to constantly look for a kitchen scale.


  • 4 eggs
  • Pinch of salt
  • 3 tablespoons of flour
  • 1/2 cup of milk
  • 50 g of raisins
  • 4 tablespoons fresh unsalted butter
  • 2 spoons of powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons of almond flakes


  • Carefully separate the whites from the yolks. Beat the egg whites with a pinch of salt until stiff, to which we add the mixed yolks.
  • Mix gently and slowly pour in the milk and sprinkle in the flour.
  • Add the raisins and mix again.
  • Heat the butter in a large pan over low heat.
  • Pour the batter into the pan and fry on medium heat.
  • When the bottom of the omelette is baked, use a spatula to divide it into small pieces and fry for a while.
  • Put the finished imperial omelet on a plate and fry the almond flakes in a pan.
  • Sprinkle with icing sugar mixed with cinnamon and toasted almond flakes.
  • Served with plum jam.

Tip: We can also serve with fresh fruit, for example raspberries, blackberries and blueberries. It always depends on when the jerky is prepared.

What is an imperial jerky?

This traditional dish, which is a common part of the cafe menu especially in Vienna, has its origins in Austria. However, this does not mean that he did not find his fans beyond the borders of Austria. On the contrary, this sweet delicacy is a popular part of the menu in many households and restaurants.

It is basically a universal dish that can be served both for breakfast and for lunch as a main course, but also as a dessert or a sweet dinner. In a way, it is a better and denser pancake, the characteristic of which is that it is torn into pieces, so to speak, squeezed into smaller pieces and heat-treated.

Someone will make it in a pan from start to finish, another will bake it in the oven after roasting on the stove. Kaiserschmarrn, as this dish is correctly called, can be served simply with sugar, with marmalade, but also covered with hot compote.

There are many stories about the origin of jerky, but we will probably never know how it really came about. Many claim that Empress Elizabeth (Sissi) prepared this delicacy one day, but when she wanted to turn the pancake, it simply fell into pieces.

Still others say that when the emperor and the empress visited the mountains once during a trip, a farmer prepared a pancake for lunch, but the pancake tore, so he hid the pancake under a layer of plum marmalade so it wouldn’t be seen. The fact is that origin is not important. The main thing is that we like it and even an absolute gastronomic amateur can prepare it.
