What will we need

  • 240 ml of vegetable oil
  • 4 large eggs
  • 350 g of sugar
  • 135 ml of applesauce
  • 1 teaspoon of pure vanilla extract
  • 1 teaspoon of orange peel
  • 315 g plain flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 2 teaspoons of ground cinnamon
  • 1 teaspoon of ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 260 g of peeled and chopped carrots
  • 130 g coarsely chopped pecans

For the cheesecake layer

  • 340 g of cream cheese
  • 50 g granulated sugar
  • 1 large egg
  • 1 teaspoon of pure vanilla extract

For the glaze

  • 120 g of powdered sugar
  • 30-45 ml of fresh orange juice

Method

  • Preheat the oven to 180°C.
  • Grease the cake tin thoroughly.
  • In a large bowl, whisk the oil, eggs, brown sugar, applesauce, vanilla, and orange zest until combined.
  • In another large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves until combined.
  • Pour the wet ingredients into the dry ingredients and mix together until combined.
  • Stir in carrots and pecans.
  • Pour and spread half of the batter into the mold.
  • In a medium bowl, beat the cream cheese until completely smooth and creamy. Add sugar, eggs and vanilla.
  • Spread the cream cheese mixture in an even layer over the carrot cake batter, trying to avoid spreading it to the edges of the pan.
  • Pour and spread the remaining cake batter evenly, then use a knife to very gently mix the batter together.
  • Bake for 55-75 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • When done, remove from the oven and let cool inside the pan for 30 minutes.
  • Make sure the carrot cake is completely cool before glazing.
  • Mix the glaze ingredients together and drizzle over the cake.

Prepare the cake 1 day in advance. Allow to cool completely, cover tightly, then refrigerate. Let it sit at room temperature for a few hours before serving.
It is best to decorate it with the glaze just before serving.
To freeze, let the brownie cool completely, wrap tightly and freeze for up to 3 months.
Thaw overnight in the refrigerator.

Method

  • Preheat the oven to 160˚C. Wipe out the cake pan.
  • In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, raisins and walnuts.
  • In another bowl, whisk the eggs, olive oil, sugar, vanilla and carrot until smooth.
  • Pour the wet mixture into the dry flour mixture and mix together until combined.
  • Pour the batter into the prepared pan and bake for 60-65 minutes, until a toothpick inserted into the center of the cake comes out clean.
  • Allow the carrot cake to cool in the pan for 10-15 minutes.

  • 225 ml of sunflower oil
  • 4 large eggs
  • 275 g light brown sugar
  • 300 g grated carrot
  • 100 g raisins (optional)
  • Peel of 1 orange
  • 275 g plain flour

  • 2 teaspoons of baking powder
  • 1 teaspoon of ground ginger
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of nutmeg

For the frosting

  • 100 g of butter
  • 200 g of full-fat cream cheese
  • 1 teaspoon of vanilla extract
  • 400 g of powdered sugar

Method

  • Preheat the oven to 180 degrees. Clear the form.
  • Pour the sunflower oil and eggs into a large bowl and add the sugar – mix gently.
  • Add the grated carrot, raisins and orange peel and mix.
  • Add the flour, baking soda, baking powder, ginger, cinnamon and nutmeg and mix again.
  • Pour the mixture into the mold and bake in the oven for 55-60 minutes.
  • After baking, leave to cool in the tin for 10 minutes, then turn out.
  • Beat the softened butter until really smooth.

  • 280 ml of sunflower oil

  • 4 large eggs
  • 300 g carrots (peeled and grated)

For the honey glaze

  • 60 g of powdered sugar
  • 120 g of full-fat cream cheese
  • 1 spoon of honey
  • Juice 1 lemon

Method

  • Heat the oven to 180°C. Grease the mold with butter.
  • Sift the flour, baking soda, baking powder, cinnamon, cloves and allspice into a large bowl.
  • Stir in the coconut and walnuts.
  • Put the oil and sugar in another large bowl and beat until pale and thick.
  • Add the eggs, then add all the grated carrots.
  • Stir in the flour mixture, pour the batter into the greased pan and bake for 45 minutes or until a skewer inserted into the center comes out clean.
  • Leave to cool in the pan for 15 minutes, then turn the cake out onto a wire rack to cool completely.

How to decorate a cupcake with frosting

Icing made from confectioners’ sugar, milk and vanilla extract and lemon juice.

Method

  • In a small bowl, combine the sugar, milk and vanilla. Mix until smooth. Let stand for 5 minutes to thicken if desired. Mix in enough confectioners’ sugar that the frosting runs easily off a spoon, but is still opaque and thick enough that it won’t soak into the cake.
  • Pour the frosting over the cake and let it rest at room temperature until the frosting sets, or refrigerate, covered.

How to decorate a cake with chocolate ganache

Delicious ganache, made only from chocolate and cream.

Method

  • In a small saucepan, heat the whipping cream until hot, then stir in an equal amount of semi-sweet chocolate chips or chopped chocolate. Whisk until the chocolate is melted and the ganache is smooth.
  • Chill the ganache in the fridge for 20-30 minutes, it should be a little thicker but still runny.
  • Pour over the cake and serve immediately, or place in a covered container and refrigerate until the chocolate has set.

How to decorate a cake with cream

For the cream, you will need butter (115 g), cream cheese (230 g), a teaspoon of vanilla extract, powdered sugar (500 g).

Method

  • Make the cream cheese frosting, making sure to use room temperature cream cheese. If the frosting is very soft, let it cool briefly in the refrigerator to harden a little.
  • Put the cream in a pastry bag and decorate the cake with it.
  • Store the covered cake in the refrigerator.
