Carrot pudding on a baking sheet
Try this easy, quick and very delicious carrot cake on a baking sheet. Perfect for breakfast, afternoon dessert or just sitting around.
Ingredients
- 130g semi-coarse flour
- 2 eggs
- 180g of sugar
- 1 teaspoon of honey
- 3-4 carrots (finely grated)
- 120 ml of vegetable oil
- 1/2 teaspoon of baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon of cinnamon
- pinch of salt
- 250 g of cottage cheese
- 200g of grass
- 80g of powdered sugar
- lemon juice
Method
- First, grate the carrots finely. Set aside.
- In a bowl, beat the eggs with the sugar until foamy. Then add honey and oil.
- In another bowl, mix the flour with baking soda, baking powder, cinnamon and a pinch of salt.
- Gradually work the loose mixture into the egg foam.
- Finally, add the grated carrot and mix well.
- Pour the finished dough onto a greased and lined tray or tray with baking paper.
- If necessary, smooth the surface with a trowel so that it is the same height everywhere.
- Bake in a preheated oven at 170°C for about 30 minutes. Test with a skewer to see if it is cooked.
- After the bun has cooled down, spread the cream that you prepared by mixing cottage cheese with sugar, mixing in meadowsweet or other fresh cheese, and finally sprinkle with lemon to taste.
- You can also sprinkle chopped nuts on top of the finished pudding.

Carrot cake
Almost everyone has eaten a classic bábovka. But try to bake it a little differently and healthier.
Ingredients
- 2 cups semi-coarse flour
- 3 eggs
- 1 cup of sugar
- 1/2 cup oil
- 1/2 cup of milk
- 1 baking powder
- 1 vanilla sugar
- 4 grated carrots
Method
- First, finely grate the carrots and set aside.
- In a bowl, beat the egg yolks with the sugar until foamy.
- Add flour, oil and milk.
- In another bowl, whip the egg whites until stiff peaks form. Gradually work it into the yolk mixture.
- Finally, add vanilla sugar, baking powder and grated carrot.
- Mix well and pour the finished dough into the cake pan.
- Bake at 180°C for 30-40 minutes. Test with a skewer to see if it is cooked and let it cool.
- After cooling, turn out of the mold and serve.

Ingredients for the body

- 1 cup chopped nuts

- 1 teaspoon of ground cinnamon

Ingredients for the frosting
- 250 g of cottage cheese
- 120g of fresh cheese (lučina, gervais,…)
- 1 vanilla sugar
- 180g of powdered sugar
Method
- First, preheat the oven to 180°C.
- In a bowl, mix the loose ingredients – flour, sugar, baking powder, baking soda, cinnamon and a pinch of salt.
- In another bowl, beat the eggs with the oil and finally add the grated carrot.
- Gradually work the loose ingredients into the wet.
- Then mix in the chopped nuts.
- Pour the resulting dough into a greased and lined baking pan or onto a smaller baking sheet.
- Bake for 50 minutes. Test with a skewer to see if it is cooked and then let it cool.
- Meanwhile, prepare the frosting by mixing all the ingredients with a blender or by hand.
- Spread the frosting evenly over the whole bun and put it in the fridge for at least an hour.

- 1/2 cup of milk
Ingredients for the frosting
- 1 cup powdered sugar
- 1 tablespoon water (hot)
- 4 tablespoons of lemon juice (according to thickness)
Method
- Preheat the oven to 180°C.
- In a bowl, beat the eggs with the sugar until foamy.
- Finely grate the carrot and apple and mix them into the sugar foam.
- Then add milk and mix.
- Sift the flour and mix with the baking powder and gingerbread spice. Gradually stir into the mixture.

Ingredients
- 3-4 grated carrots
- 200g of walnuts
- 200g of powdered sugar
- 150g plain flour
- 150g coarse flour
- 4 eggs
- 300 ml of oil
- 1 teaspoon of baking powder
- 1 spoon of vanilla sugar
- butter for wiping the baking sheet + flour for pouring
- powdered sugar and lemon juice for the glaze
Method
- Grate the carrot and set aside.
- Beat eggs with sugar in a bowl and add oil.
- Gradually mix in the flour mixed with baking powder and vanilla sugar.
- Finally, mix the grated carrot with the juice and pour the resulting dough into a greased and floured mold.
- Bake for 35-45 minutes. Test with a skewer to see if it’s ready.
- While the bun is baking, prepare the frosting. Mix the powdered sugar with the lemon juice. Alternatively, dilute with a spoonful of hot water.
- Spread the frosting over the entire surface of the cooled bun and finally decorate it with chopped walnuts.
