Prepare one of the simple recipes for carrot cake, whether with nuts, cottage cheese, mascarpone or walnut.

Nut and carrot cake

Choose any nuts you want. Although I mention walnuts in the recipe, you can also use pecans, hazelnuts or even cashews. To make the dough more elastic, you can add grated apple.

Ingredients

  • 2 cups semi-coarse flour
  • 3 large grated carrots
  • 1 grated apple
  • 1 teaspoon gingerbread spice
  • 1 teaspoon ground cinnamon
  • 1 cup brown/cane sugar
  • 1 cup chopped walnuts
  • 1 cup vegetable oil
  • 3 eggs
  • 250g of full-fat cottage cheese
  • 2 teaspoons of finely grated lemon peel
  • 1.5 cups of powdered sugar
  • Walnuts for decoration

Method

  • Preheat the oven to 180°C and grease the cake tin – line the base and sides with baking paper.
  • Sift the flour, gingerbread spice and cinnamon in a bowl.
  • Add cane sugar, grated carrot, apple, chopped walnuts, oil and egg.
  • Mix everything properly and then pour into the mold.
  • Bake for 1 hour 15 minutes or until a skewer inserted into the center comes out clean.
  • Using a mixer, beat the cottage cheese and lemon zest until smooth and gradually beat in the icing sugar.
  • Spread the frosting on the baked cake, garnish with walnuts and serve.

Healthy carrot cake with yogurt

Carrot cake is a pretty healthy dessert in itself. But why not make it even more fit? Use yogurt instead of cottage cheese and almond milk instead of cow’s milk.

Cake ingredients

  • 1.5 cups spelled flour
  • 2 teaspoons of baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • Pinch of salt
  • A pinch of ground cloves
  • 1/4 cup coconut oil
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 3/4 cup maple syrup
  • 1/2 cup Greek yogurt
  • 1/3 cup unsweetened almond milk
  • 3 grated carrots
  • 1/2 cup raisins

Ingredients for the frosting

  • 1.5 cups of Greek yogurt
  • 2 tablespoons of maple syrup
  • 1 teaspoon of vanilla extract

Method

  • Preheat the oven to 180°C and brush the baking tray with coconut oil.
  • Mix flour, baking soda, cinnamon, nutmeg, ginger, ground cloves in a bowl and set aside.
  • In another bowl, whisk together the eggs, coconut oil, vanilla extract, pure maple syrup, Greek yogurt, and almond milk.
  • Add the wet ingredients to the bowl with the dry ingredients and mix well.
  • Add the grated carrot, raisins and pour the batter into the prepared baking dish.
  • Bake for 20-25 minutes until a skewer comes out clean.
  • Allow the cake to cool completely to room temperature before spreading the frosting.
  • Make the frosting by mixing together Greek yogurt, maple syrup, and vanilla extract. Then spread the frosting on the cooled cake.
  • Let the frosting set for 1-2 hours before slicing and serving.

Carrot cake with orange mascarpone

This recipe is special thanks to the orange mascarpone, which gives the cake a fresh summer taste.

Cake ingredients

  • 130 g of sugar
  • 120 ml of sunflower oil
  • 4 eggs
  • juice and grated peel from one orange
  • Seeds from half a vanilla pod
  • 240 g of wholemeal flour
  • 2 teaspoons of baking powder
  • 3 pinches of salt
  • 1 pinch of grated nutmeg
  • 1 teaspoon ground cinnamon
  • 2 large grated carrots
  • A handful of chopped walnuts
  • A handful of chopped almonds
  • Pistachios for sprinkling.

Cream ingredients

  • 250g of Italian mascarpone
  • 100g of powdered sugar
  • Zest and juice of ½ orange

Method

  • Preheat the oven to 180°C.
  • In a large bowl, mix all the wet ingredients – sugar, oil, eggs, pod seeds and zest with the orange juice.
  • Next, in a bowl, mix the dry ingredients – flour, baking powder, salt, nutmeg and ground cinnamon.
  • Mix the dry ingredients into the wet ingredients until the mixture is completely combined.
  • Finally, add the grated carrot and nuts.
  • Grease a cake tin with butter and sprinkle lightly with sugar, then pour in the batter, being careful not to cover more than ⅔ of the tin.
  • Bake for about 40 minutes or until a skewer inserted in the center comes out clean.
  • Meanwhile, beat the mascarpone cheese with the sugar until you get a smooth cream.
  • Add freshly grated orange peel and juice.
  • When the cake is done, remove it from the oven and let it cool.
  • Cut the cake in half horizontally and spread the cream. Spread the cream on top of the cake as well.
  • Finally, sprinkle with crushed pistachios and serve.

Simple flourless carrot cake

  • Grease a cake tin with butter or coconut oil or line it with baking paper.
  • Combine the almonds and brown sugar in a food processor. Blend until the almonds are finely ground.
  • Then add the baking powder, salt, cinnamon, nutmeg and lemon zest.
  • Beat the eggs in the bowl of a stand mixer fitted with an electric beater.
  • Add the powdered sugar and continue beating until the mixture forms snow.
  • Add the vanilla, almond mixture and grated carrot to the mixture.
  • Pour the batter into the prepared tin, place in the oven and bake for one hour until the cake is firm to the touch.
  • Allow to cool completely after baking and then serve.
  • You can spread it with, for example, yogurt or cottage cheese.

  • 1 teaspoon of vanilla extract

  • 1 tub of full-fat cottage cheese
  • 50g room temperature butter
  • 3 cups of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of lemon juice
  • Ground nuts for sprinkling

Method

  • Preheat the oven to 180°C and grease a cake tin with butter and sprinkle with flour.
  • In a large bowl, whisk together the oil, eggs, brown sugar, granulated sugar and vanilla.
  • In a separate bowl, sift together the flour, baking powder, cinnamon, baking soda, salt, gingerbread spice and cloves.
  • Stir in the grated carrots to coat them in the flour (this will help extract as much color as possible).
  • Add the loose mixture to the wet mixture and mix well. Then add pieces of nuts or raisins.
  • Pour the batter into the mold and bake for 25 to 30 minutes. Allow to cool completely after baking.
  • For the frosting, beat the cottage cheese and butter until smooth, add half the caster sugar, vanilla and lemon juice, then beat in the remaining caster sugar.
  • Cut the cooled cake in half horizontally. Apply a sufficient amount of cream on top of one half and the same on top of the other and on the sides.
  • Finally, sprinkle the cake with nuts and serve.
