  • 25 dkg of flour

  • 1 teaspoon of salt
  • 1 teaspoon of cinnamon
  • ¾ teaspoon of nutmeg
  • a cup of nuts
  • 4 cups powdered sugar
  • 40 dkg of cottage cheese
  • 10 dkg of butter
  • 4 teaspoons of vanilla extract

Preparation process:

  • Preheat the oven to 160°C.
  • Grease the baking tin with butter.
  • Beat the sugar, oil and eggs.
  • Slowly add the dry ingredients and mix thoroughly.
  • Add carrots and nuts.
  • Pour the batter into the prepared mold and bake for three quarters of an hour.
  • How do you know when the cake is ready? Pierce it with a skewer. When no dough remains on it, it is ready and baked.
  • Let the cake cool.
  • Prepare the cottage cheese mixture: mix the icing sugar, cottage cheese, butter and vanilla extract. Beat with a mixer until everything is perfectly combined.
  • Spread the cheese mixture over the cake.
  • You can sprinkle coconut, cocoa or cinnamon on top.

Mug Carrot Cake

You will need:

For the pie dough:

  • 1.5 cups plain flour
  • ¾ cup of butter
  • pinch of salt
  • a little very cold water

For the filling:

  • 2 cups grated carrots
  • 2 eggs
  • 1 tablespoon of vanilla extract
  • 1 cup brown sugar
  • 1 teaspoon of ground cinnamon
  • ¾ cup milk

Preparation process:

  • First, prepare the pie dough by mixing the still hardened butter with salt and flour. Work the mixture very well until it becomes a mass resembling crumb. Then slowly pour in very cold water. The dough should still be quite crumbly, not wet. Briefly roll out on a floured surface and place in a buttered cake tin. Place baking paper on top of the dough and sprinkle at least a cup of beans on top to prevent the dough from rising too high. Bake for 15 minutes in a moderate oven.
  • Now we prepare the filling. First, grate your carrots.
  • Beat the eggs, sugar and milk for about 5 minutes.
  • Then add ground cinnamon and ¾ cup milk. Add the grated carrot and vanilla extract. And hooray for the cake mix!
  • Bake in a moderately heated oven for about half an hour.
  • After cooling, cut the cake into slices and decorate with whipped cream.

Preparation process:

  • 440 grams of ground almonds

Cake with carrots made from spelled flour

  • 1 cup spelled flour
  • 1 cup cane sugar
  • ¾ cup olive or rapeseed oil

Carrot cake with mascarpone

You will need:

For the dough:

  • 220 grams of carrots
  • 175 grams of butter
  • 175 grams of plain flour
  • 2 teaspoons of baking powder
  • 3 eggs
  • 2 tablespoons of buttermilk or yogurt
  • 50 grams of ground almonds
  • ½ teaspoon ground cinnamon
  • pinch of salt

For the cream:

  • 700 grams of cream cheese (buko, lučina, etc.)
  • 500 grams of mascarpone
  • 80 grams of powdered sugar
  • 1 to 2 lemons

Preparation process:

  • First, preheat the oven to 160°C.
  • Sift the flour, salt, cinnamon and baking powder into a bowl
  • Fill the second bowl with butter, sugar and beat.
  • Crack the eggs: yolks and whites separately.
  • Add the egg yolks, buttermilk to the bowl with the butter and sugar and mix carefully.
  • Finally, add the flour mixture, almonds and carrots and mix.
  • Beat the egg whites until stiff and carefully fold them into the dough.
  • Line a baking dish with a diameter of around 20 centimeters with baking paper.
  • Bake for about 1 hour, then remove the baked body and let it stand for about 10 minutes, then it will be easy to remove from the mold.
  • Leave to cool.
  • In the meantime, prepare the cream: mix the mascarpone, cheese and powdered sugar and season with lemon juice.
  • Cut the body twice lengthwise, you will have 3 parts.
  • Spread about ¼ of the cream on the bottom part.
  • Then place the second part of the dough on top of the cream and spread it again with cream.
  • The same procedure applies to the third part.
  • Spread the rest of the cream over the entire cake.
  • Chill in the fridge for at least two hours.

TIP: Prepare a carrot cake with sour cream. This cake is a great alternative to the mascarpone cake, you can use the exact same procedure as for the mascarpone cake.

Carrot cake without eggs

You will need:

  • 100 grams of spelled flour
  • 250 grams of smooth wholemeal flour
  • 100 grams of sugar
  • 120 grams of fat
  • 2 large carrots
  • ½ baking powder
  • ½ chopped shelled sunflower seeds
  • 2 to 3 tablespoons of agave syrup
  • milk as needed

Preparation process:

  • Mix the flour, sugar, baking powder, starch and grated carrot in a bowl.
  • Add the softened fat and mix with a whisk.
  • Gradually add the milk to make a creamy batter.
  • Finally, sprinkle chopped sunflower seeds.
  • Mix everything well and pour onto a tray lined with baking paper.
  • Bake in an oven heated to 175 °C for about 40 minutes.
  • The resulting height of the cake should be roughly 1.5 to 2 centimeters.
  • You can leave the cake without the frosting or use any frosting you like!
