What will we need

  • 400 g of carrots
  • 1 large onion
  • flour

Method

  1. Fry finely chopped onion in oil in a saucepan and add finely grated carrot.
  2. Fry together until the carrots start to smell.
  3. Cover with water, add sugar, salt and simmer gently.
  4. Finally, thicken with flour.

Carrot cake

What will we need

  • 180 g granulated sugar
  • 120 g grated walnuts
  • 3 eggs
  • 150 g of oil
  • 260 g of finely grated carrots
  • 2 tablespoons of plain yogurt
  • 0.5 bag of vanilla sugar
  • 180 g plain flour
  • a pinch of nutmeg
  • 1 teaspoon of ground cinnamon
  • 1 teaspoon of ground ginger
  • 0.5 bag of baking powder
  • 0.5 bag of baking soda

For filling

Method

  1. First, we prepare the dough: mix granulated sugar and grated nuts, eggs, yogurt and carrots in a bowl. Add flour mixed with baking powder and baking soda, season with spices.
  2. Grease the cake mold and sprinkle it with coarse flour and pour the prepared dough into it.
  3. Bake in the oven at 140 degrees Celsius for about an hour and a quarter.
  4. After cooling, carefully turn out.
  5. Prepare the filling: mix the cottage cheese with sugar and vanilla sugar, add butter and mix. Finally, stir in the vegetable cream.
  6. Cut the baked cake twice and spread the filling.
  7. We put everything together again and anoint the surfaces with the filling.
  8. Finally, decorate with coarsely grated nuts.

Carrot soup

Carrot soup is perhaps the best vegetable soup you can make.

  • 3 carrots
  • 2 small raw potatoes
  • marjoram

  • 4 eggs
  • 500 g of carrots
  • 500 g semi-coarse flour

  • In a large bowl, whisk together the eggs, water and oil.

Carrot cake

Carrot cake is baked with classic carrot cake ingredients like grated carrot, pineapple and walnuts and topped with vanilla frosting.

What will we need

  • 250 g of granulated sugar
  • 3 large eggs
  • 150 ml of vegetable oil
  • 2 teaspoons of pure vanilla extract
  • 500 g grated carrots
  • 400 g canned crushed pineapple with juice
  • 2 teaspoons of baking soda
  • 2 teaspoons of ground cinnamon
  • 1 teaspoon of salt
  • 750 g of flour
  • 200 g chopped walnuts

For the frosting

  • 500 g of confectioners’ sugar
  • 1 teaspoon of vanilla extract
  • 1-2 tablespoons of milk

Method

  • Preheat the oven to 180 degrees.
  • Grease a large cake pan.
  • In a large bowl, whisk together the sugar, eggs and oil and stir in the vanilla extract.
  • In a separate large bowl, whisk together the flour, baking soda, cinnamon, and salt.
  • Gradually mix the dry ingredients into the liquid.
  • On low speed, gently mix in carrots, pineapple and walnuts.
