Ermelín, a cheese with mold on the surface , is certainly known to all of us and is usually included in the shopping list.
And why do we call him magical? Ermelin can be prepared in many ways and it always tastes really wonderful.

Pickled Hermelin cheese
This recipe for marinated cheese is one of the most popular appetizers offered by almost every Czech pub. The preparation is very easy and takes no more than 15 minutes.
What will we need
- 500 g ermine (camembert or “ermine-type” goat cheese can also be used)
- 150 g of onion
- 8 cloves of garlic
- 120 g of chili peppers
- 1 teaspoon whole pepper
- 1 teaspoon paprika
- 2-3 bay leaves
- 2 tablespoons thyme, fresh or dried
- sea salt to taste
- extra virgin olive oil (as much as you need to cover the cheese)
Method
- Clean and dry a jar with a lid that has a rubber seal or any sealable jar.
- Cut all the pieces of ermine crosswise.
- Peel and press the garlic and chop the onion.
- Rub the garlic on the inside of the cheeses.
- Sprinkle with paprika and salt.
- Add the onion slices and cover with the other half of the cheese.
- Put one cheese in a glass and add bay leaves and whole pepper.
- Try to cram the cheeses into the glass as close together as possible so you don’t have to use too much olive oil.
- If necessary, cut the cheese in half to fit the jar.
- Add the thyme and pickled chilies and the remaining onions.
- Drizzle with extra virgin olive oil until the cheese is completely covered in oil.
- Shake the container to get the air bubbles out.
- Close the jar and protect it from direct sunlight and store it at room temperature for 1-6 weeks.
- Shake every 2-3 days to get the air out.
- Once ripe and soft, store in the refrigerator for up to 2 weeks. Serve with pickled chili, onion rings and homemade bread, at any barbecue.
The ripening time depends on how ripe the cheese is. If it is soft when you put it in the jar, it may only last 3 days. If the cheese is still hard, it will take about 2 weeks to marinate.

Ermine spread

- 2 ermines
- 1 onion
- White Yoghurt
- mayonnaise
- 2 hard-boiled eggs
- spoon of mustard
- salt

Method
- Cut the ermines into pieces or grate them. Finely chop the onion and egg.
- Mix together and mix in some mayonnaise, mustard and yogurt.
- Salt, pepper and mix well.

Ermine salad
Ermine salad is one of the options for creating an excellent delicacy in no time.
What will we need
- 2 ermines
- 10 kg of ham salami
- 1 apple
- 1 onion
- 1 sterilized capsicum
- 2 tablespoons of sterilized celery
- 10 kg of mayonnaise
- 2 tablespoons of plain yogurt
- 1 tablespoon of mustard
- 2 cloves of garlic
- salt
- lemon juice
- spices to taste
Method
- Cut the ermine and salami into cubes, finely chop the onion and cut the apple, celery and capsicum into strips.
- Mix and add mayonnaise mixed with yogurt, mustard and crushed garlic.
- Mix again and season with lemon juice, salt and spices to taste.

Grilled folded ermine
There is nothing better than a summer barbecue with friends or family. Besides meat, cheese is also a popular delicacy. Try our grilled cheese recipe. It’s special!
What will we need
- 4 ermines
- 8 slices of ham or other salami
- 1 onion
- 4 cloves of garlic
- 1 tablespoon of mustard
- 3 tomatoes
- 1 spoon of ketchup
Method
- Cut each ermine into 3 circles of equal thickness.
- Spread the first circle with ketchup and pressed garlic, place a slice of salami, a circle of onion and a circle of tomato on it.
- Cover with another slice, which we rub with mustard and place a slice of salami and a round of onion and tomato on it again.
- Cover with a third slice. We repeat the procedure for all prepared ermines.
- Wrap the stuffed ermines one at a time in aluminum foil and grill for about 6 minutes.
A suitable side dish for grilled ermine is toasted bread, but also roasted potatoes or grilled vegetables.

Ermine in potato cake
Try the recipe with ermine wrapped in potato bread and discover that even when fried, this creamy cheese can conjure up a wonderful taste.
What will we need
- 7 large potatoes
- 2 eggs
- 3 cloves of garlic
- salt
- pepper
- marjoram
- caraway seeds
- 200 g plain flour
- 4 mushrooms
- 200 ml of milk
- 3 ermines
- frying oil
Method
- Wipe the garlic, add grated raw potatoes, eggs, milk, plain flour, marjoram, cumin, pepper, salt and finely chopped mushrooms. Mix everything thoroughly.
- Cut the ermines horizontally and then into quarters.
- Spoon the dough into the pan with the hot oil and put the ermine on it. Put a second layer of dough on the ermine and fry until golden on both sides.

Stuffed ermine cake
Ermelin also tastes great in combination with fruit. Try this sweet, creamy combination.
What will we need
- 2 ermines
- half a tub of cottage cheese
- 2 tablespoons of butter
- 10 dkg of ham
- 2 peaches (or other fruit)
- grated nuts
Method
- Cut the ermine into two rounds.
- We rub the cottage cheese with butter into a foam and season with salt. Using a piping bag with a decorative tip, spray it onto the ermine circles.
- Garnish with finely chopped ham, sliced peaches or other fruit, walnut kernels or grated nuts.
- We can serve.
Raspberries also go well with ermine. The entire cake can be lightly drizzled with honey or maple syrup.
