A classic cheese roll recipe that is perfect as a snack for any party.
What will we need
- 50 g of butter
- 50 g flour (wheat flour)
- 250 ml of milk
- 200 g of sliced cheese
- 4 egg yolks
- Salt
- pepper
- Nutmeg (grated)
- 4 egg whites
- 2 red peppers
- 2 bunches of chives
- 300 g of cream cheese
- Cayenne pepper
Method
- Melt the butter in a saucepan for the dough.
- Add flour and fry until golden. Cover with milk and boil briefly.
- Then dissolve 200 g of sliced cheese in the mixture.
- Stir the egg yolk into the milk and cheese mixture, season the mixture with salt, pepper and nutmeg.
- Beat the egg whites until stiff and mix in.
- Spread the dough on a baking sheet lined with baking paper and spread evenly.
- Bake in a preheated oven at 180°C for 15 minutes.
- Leave the sheet of dough to cool slightly.
- Cut the peppers into small cubes. Cut the chives into small rolls.
- Mix the cream cheese with paprika and chives and season with salt, pepper and cayenne pepper.
- Cut the cheese dough in half crosswise and spread each with a mixture of cheese and paprika.
- Roll with baking paper into two small rolls. Sprinkle the roulades with cheese and let them briefly gratinate under the grill.

Cheese roll with sliced cheese and bacon
Sliced cheese roll can take many forms. Try this recipe for a cheese roll, full of meat and bacon!
What will we need
- 2 pieces of grilled beef
- 2 tablespoons of mustard
- 200 g of arugula
- a stick of bacon
- Gouda
- 300 g of sliced cheese
- 300 g of green asparagus
- olive oil
- salt
- pepper
Method
- Depending on the size, you need 3-4 slices of Gouda and 5-6 slices of bacon for one roll.
- Season the inside of the beef roulade first with salt and pepper, then rub with mustard.
- Then top with cheese and arugula and finally roll up.
- Finally, tightly wrap the strips of bacon.
- This way, the roll holds well later when toasting and does not need skewers.
- Now fry the roulade in a pan on all sides and put it in a baking dish.
- Place sliced cheese on the rolls and bake in the oven at 200 degrees for 45 minutes.
- Just before serving, wash the green asparagus and, if necessary, peel it.
- Then simply put them in a pan with a little olive oil and sauté on medium for about 5-10 minutes.

Roll made of three types of cheese

What will we need
- 500 ml of milk
- 75 g of butter
- 100 g plain flour
- 7 eggs (separated)
- 125 g parmesan (finely grated)
- a pinch of cayenne pepper
- 125 g soft goat cheese without rind (crumbled)
- 120 g crème fraîche or sour cream
- 250g of ricotta
- 40 g mild spicy peppers (coarsely chopped)
- 40 g sun-dried tomatoes (roughly chopped)
- 30 g pitted black olives (chopped)
- a handful of chopped basil leaves plus small leaves for garnish
- 75 g of fresh basil pesto
- 1 tablespoon of virgin olive oil
Method
- Preheat the oven to 200°C.
- Line a baking sheet with baking paper and lightly grease it with butter.
- Bring the milk to a boil in a small saucepan and set aside.
- Melt the butter in a medium-sized pan, add the flour and stir-fry for a minute at a medium temperature.
- Gradually stir in the warmed milk and mix for 2 minutes until smooth and thick.
- Remove the pan from the heat, cool for a minute.
- Stir in the egg yolks, 50 g Parmesan cheese, cayenne pepper and some spices.
- Place the egg whites in a large clean bowl and beat until they form soft peaks.
- Stir into the sauce.
- Spread the mixture into the prepared mold and sprinkle the surface with another 25 g of Parmesan.
- Bake for 15 minutes until puffed and golden.
- Remove from the oven and let sit for 5 minutes, then cool completely.
- Meanwhile, mix the goat’s cheese with the crème fraîche or sour cream until smooth, then stir in the ricotta, the remaining 25g Parmesan and a little seasoning.
- Once cool, carefully spoon the goat cheese mixture over the surface of the roll to within 2.5cm of each long edge and sprinkle with the chopped hot peppers, tomatoes, black olives and basil.
- Roll up the roll, wrap it in paper, and then cling film.
- Place on a baking sheet and refrigerate for at least 4 hours.
- To serve, unwrap and cut into 12 slices about 3-4 cm thick.
- Place them on a baking sheet lined with non-stick paper and let them come to room temperature.
- Sprinkle with an extra 25g Parmesan cheese and heat in the oven at 180°C for 5-6 minutes, but keep an eye on them so the filling doesn’t melt and run out.
- Meanwhile, mix the pesto with the extra virgin olive oil.
- Transfer the roulade slices to warmed plates and serve with pesto on the side, garnished with small basil leaves.

- 8 slices of white toast (crusts cut off)
- 8 slices of cheddar cheese
- 60 g of butter
Method
- Using a rolling pin, roll out the toasted bread into a thin slice.
- Place a slice of cheese on each slice of bread and roll it up tightly.
- Melt 2 tablespoons butter in a large skillet over medium-high heat.
