What can go wrong with cheese sauce recipes? The sauce may curdle or “crush” popularly. This happens due to inconsistent mixing. But you can fix it by whipping it with a stick blender and then straining it through a fine sieve. The same problem can occur by adding cheese too quickly. That is why it is not advisable to rush.
