Cottage cheese slices – mugs
Simple but good. It will please both the grateful and the demanding diner.
INGREDIENTS:
On the corpus:
- 2 eggs
- 1 cup powdered sugar
- ½ cup of oil
- 2 cups plain flour
- 1 baking powder
- 1 cup of milk
- 1 spoon of cocoa
For the cream:
- 500 ml of milk
- 2 vanilla pudding powder
- 2 vanilla sugars
- 125 g of butter
- 500 g of cottage cheese in a tub
For the frosting:
- 100 g dark chocolate min. 60%
- 200 ml of whipping cream
METHOD:
Corpus:
- Beat eggs with sugar until foamy, add oil, milk and flour mixed with baking powder.
- Remove half of the dough and pour onto a greased baking sheet.
- Add cocoa to the second half and pour onto the light dough.
- Bake at 180°C for about 15 minutes.
Cream:
- Cook the puddings according to the instructions in half a liter of milk.
- Add vanilla sugars and butter.
- Stir the cottage cheese into the cooled mixture and mix thoroughly.
- Spread the cream over the cooled carcass.
Glaze:
- Bring the cream to a boil and add to the chocolate melted in a steam bath.
- Whisk until thickened.
- Pour on top of the cut and let cool.

Line cheese slices
These line cuts with cranberry-curd filling invite you to try them. They look nice, but they are also very tasty.
INGREDIENTS:
For the dough:
- 250 g of peeled almonds
- 100 g ground hazelnuts
- 400 g plain flour
- 250 g of powdered sugar
- pinch of salt
- 2 teaspoons gingerbread spice
- 250 g of softened butter
- 5 egg yolks
For the filling:
- vanilla pod
- 400 g semi-fat cottage cheese in tinsel
- 70 g of sugar
- 1 egg
- 20 g plain flour
- a pinch of crushed cloves
- a pinch of nutmeg
- 400 g of cranberry jam
- 1 egg yolk
METHOD:
- Mix the ground almonds and walnuts with flour, icing sugar, salt and spices into a gingerbread.
- Add the butter, process, then the egg yolks and process.
- Divide it into thirds, wrap in food foil and leave to cool in the fridge for an hour.
- Then roll the two parts into even sheets and pierce them with a fork.
- From the ingredients for the filling, with the exception of the cranberry marmalade, whip the cottage cheese filling and spread the second layer on it.
- Place the second layer on top of the cheese filling and spread with marmalade.
- Cut arbitrary shapes from the third part of the dough (for example stars) and decorate the top part of the cut.
- Bake at 180°C for about 35 minutes.

Sprinkled cottage cheese slices
They resemble cocoa nibs, which blend with the curd filling with a light touch of lemon.
INGREDIENTS:
On a small scale:
- ⅔ cup sugar
- 10 spoons of softened butter
- 1 and ¼ cups semi-coarse flour
- 1 and ¼ cup plain flour
- ½ cup of cocoa
- 1 large egg
For the filling:
- 3 eggs
- ½ cup of sugar
- ⅛ teaspoon of salt
- ⅓ cup cornstarch
- ½ cup of oil
- zest of 1 lemon
- 1 teaspoon of vanilla extract
- 2 cups semi-fat cottage cheese
METHOD:
- Mix the crumbly ingredients into a crumbly mixture, or add about 2 teaspoons of water.
- Put ⅔ of the crumbs in a smaller baking dish greased with butter.
Filling:
- Separate the yolks from the whites.
- Beat the egg whites with salt until stiff.
- In another bowl, mix the egg yolks with 2 tablespoons of sugar, cottage cheese, lemon zest and finally add the cornstarch.
- Carefully whisk the egg whites into this curd mixture and apply the cream to the body.
- Sprinkle the top with the remaining crumbs.
- Bake at 180°C for about 15 minutes.

Tricolor cheese slices
Do you love chocolate? Here we have three – bitter, milk and white. And watch out! These cheese slices are unbaked.
INGREDIENTS:
- 125 g butter cookies
- 100 g of butter
- 6 slices of gelatin
- 150 g of dark chocolate
- 100 g of milk chocolate
- 150 g of white chocolate
- 500 g of low-fat cottage cheese
- 100 g of sugar
- 1 spoon of vanilla sugar
- 300 g of whipping cream
METHOD:
- Crush the biscuits and mix them with the melted butter.
- Spread this mixture into a baking paper-lined form (11×26 cm), press and leave to cool.
- Let the gelatin swell in cold water.
- Break up 100g of each chocolate and melt each separately over steam.
- Mix the cottage cheese with sugar and vanilla sugar.
- Take 3 tablespoons of the curd mixture in a saucepan and heat it carefully, add the squeezed gelatin and let it dissolve.
- Fold this mixture into the rest of the curd mixture.
- Divide the curd mixture into thirds.
- Whip the whipped cream and divide it also into 3 portions.
- Add the cooled dark chocolate with a third of the whipped cream to one third.
- Add milk chocolate to the second third and whipped cream to the second third
- And until the last third, white chocolate with the last third of whipped cream.
- Spread the cream with dark chocolate on the body, place the cream with milk chocolate on it and finally spread the cream with white chocolate.
- Let the dessert harden overnight in the fridge.
- The next day, remove the dessert from the mold and decorate with the rest of the melted dark and white chocolate.

Two-tone cuts with cottage cheese
This curd cut resembles a mottled cow. It can interest young children and thus become a popular snack.
INGREDIENTS:
On the corpus:
- 250 g plain flour
- 250 g semi-coarse flour
- pinch of salt
- 2 packets of vanilla sugar
- 250 g of sugar
- 40 g of cocoa
- 1 packet of baking powder
- 275 g of softened butter
- 2 eggs
For the cream:
- 250 g of butter
- 6 eggs
- 300 g of sugar
- 1 kg semi-fat cottage cheese
- 1 package of vanilla pudding
- juice and zest of 1 lemon
METHOD:
- Mix the flours, sugar, vanilla sugar, cocoa and baking powder.
- Cut the butter into cubes and add to the flour. Beat the eggs and add to the mixture.
- Beat everything together and make a loaf out of the dough.
- Divide the loaf into two thirds and a third.
- Wrap both loaves in cling film and refrigerate for 30 minutes.
Preparation of the cream:
- Let the butter melt and cool it a little.
- Beat 2 egg whites together with a spoonful of sugar.
- Add the cooled butter to the beaten egg whites.
- In another bowl, mix the rest of the eggs together with two yolks, the rest of the sugar, custard, cottage cheese, lemon zest and juice.
- Finally, mix the egg white mixture with the butter into this mixture.
Final edit:
- Grease a baking tray with butter and sprinkle with flour.
- Roll out the larger part of the dough (two thirds) and spread it on the baking sheet.
- Spread the cream on top and tear the rest of the cocoa dough over the cream to make spots.
- Bake it in a preheated oven at 180 °C for about 50 minutes.

Tip: You can roll out the dark dough that you will use to make the spots and cut out your favorite shapes (eg stars, hearts). It will look even better.
Tender cheese slices with tangerines
Slices with cottage cheese are also excellent with pieces of fruit. How about tangerines? Or use your imagination and put a different jam in there.
INGREDIENTS:
On the corpus:
- 2 eggs
- 100 g of sugar
- 100 g semi-coarse flour
For the cream:
- ½ cup of sour cream
- 1 baking powder
- 500 g semi-fat cottage cheese
- 250 g of sugar
- 1 packet of vanilla sugar
- 1 can of tangerines
- 1 package of gelatin
METHOD:
- Mix all the ingredients for the dough, pour into a small baking dish (approx. 25×25 cm).
- Bake at 150°C for about 20 minutes.
Preparation of the cream:
- Mix the cottage cheese with sugar, add sour cream, mandarins without juice and pour gelatin according to the instructions on the package.
- Spread the curd mixture on the carcass and leave to cool in the fridge.
