What will we need
- 250 g of Niva cheese
- vegetable butter
- 2-3 cloves of garlic
- 80 g of onion
- salt
Method
- Beat the vegetable butter and wipe it with grated cheese.
- Add the wiped garlic, finely chopped onion, salt as needed and beat everything well.
- We can soften it with milk or cream.

Ermine spread
We should not overwhelm the delicate taste of ermine with other spices or other ingredients with a strong taste.
What will we need
- 2 packs of Ermine
- 350 g sour cream
- 4 spring onions
- 3 teaspoons of sweet paprika
- pepper
- salt
Method
- Grate the ermine or mash it with a fork.
- Add sour cream, chopped onion.
- Season with ground paprika, pepper and salt.
- Mix everything thoroughly.
- Spread the spread on the pastry.

Niva spread
Niva is one of the cheeses with a distinctive taste and can be grated or mashed with a fork into the spread. Even with Niva, it is not very appropriate to drown out its taste with other ingredients.
What will we need
- 250 g of cream cheese
- 80 g sour cream
- 1/2 teaspoon white pepper
- 1/4 to 1/2 teaspoon salt
- 200 g Niva
- 40 g of minced fresh chives
- Toasted and chopped pecans (optional)
- Apple and pear slices
Method
- Mix the first 4 ingredients.
- Gently stir in the niva and chives.
- Sprinkle the spread with pecans if desired. Served with slices of apples and pears or fresh bread.

Spicy cheese spread on sandwiches
In order to achieve the spicy flavors of the cheese spread, we can use different strong spices or cheeses – for example, Balkan.
What will we need
- 50 g vegetable fat
- 100 g of Lučina cheese
- 2 tablespoons of cream or white yogurt
- 100 g of Balkan cheese
- 2 hard-boiled eggs
- 50 g of ham salami
- 100 g of fresh peppers – green and red
- 60 g of sweet and sour cucumbers
- salt
- pepper
Method
- Whip the vegetable fat into a foam with Lučina and cream or yogurt.
- Add grated Balkan cheese, grated hard-boiled eggs, finely chopped ham salami and finely chopped green and red peppers and sweet and sour cucumbers.
- Salt and pepper.
- Mix everything thoroughly.

- 100 g of South Bohemian ripening Romadúr cheese

- 100 g of onion
- 1 teaspoon ground paprika
- crushed cumin

- pepper
Method
- Put melted cheese, ripened cheese mashed with a fork, finely grated hard cheese into a bowl.
- Add sour cream and mix everything well.
- Add finely chopped onion, ground paprika, crushed cumin, salt and pepper.
- We beat everything thoroughly.

What types of cheese are suitable for cheese spreads?
We can prepare spreads from all kinds of cheese. Of course, soft curd cheeses or processed cheeses, which make the spread smooth and spread well on pastries, are more suitable.
Harder cheeses can also be used very well, which we finely grate and combine with softer and smoother ingredients. These cheeses can also be blended or dissolved in milk.
Spreads made from special cheeses such as Hermelín or Niva are delicious, and we can prepare a very spicy spread from cheeses with a strong taste, such as Olomouc cottage cheese.
Spreads can be served immediately after processing, but they usually benefit from letting them sit for a while so that the individual flavors of the ingredients have a chance to combine.
We spread the spreads on white and dark pastries of various shapes, we can give preference to whole grain pastries. Decorate with pieces of colorful vegetables, onion rings, walnut kernels and a piece of spicy fruit.
