Traditional chicken broth

Do you have leftover chicken bones, meat or giblets at home? Use them and prepare your healthy chicken broth full of health-promoting substances.

Ingredients

  • 1 small chicken (1-1.5 kg)
  • 1 large onion – quartered
  • 2 medium carrots – trimmed and cut into large pieces
  • 2 stalks of celery – trimmed and cut into large pieces
  • 8 sprigs of parsley
  • 4 sprigs of thyme
  • 1 clove of garlic
  • 6 pieces of pepper
  • 1 bay leaf

Method

  • Put the chicken in a large pot (rather tall and narrow).
  • Cover it with cold water (about 8 cups).
  • Bring the water to a boil and collect and discard any foam that rises to the surface.
  • Cook for at least 30 minutes.
  • Add the onion, carrot, celery and cook for another hour and a half.
  • With 30-45 minutes remaining, add all the spices and herbs to the pot.
  • Simmer and simmer until the chicken is tender and the stock is thick and flavorful.
  • Transfer the chicken and vegetables to a large bowl and season the broth with salt.
  • Tear/chop the meat, remove the skin and bones and use it in a soup or other dish.
  • Strain the broth again to remove any residue left in the broth.

TIP: You can put the broth in jars, refrigerate for 5 days and then freeze for up to 3 months.

Chicken broth with liver dumplings

Come improve your soup and prepare your own liver dumplings from quality ingredients.

Ingredients for the broth

  • 500 g chicken bones/offal and trimmings
  • 3 large carrots
  • 1/2 large celery
  • 2 pieces of parsley
  • 1 large onion
  • Parsley
  • 6 whole pepper balls
  • 3 balls of allspice
  • salt

Ingredients for liver dumplings

  • 250g of poultry liver
  • 250g of chicken breast
  • 175g of breadcrumbs mixed with 50ml of milk
  • 4 yolks
  • 2 teaspoons dried marjoram
  • 1 tablespoon chopped parsley
  • 2 cloves of crushed garlic
  • salt and pepper to taste

Method

  • Put the chicken giblets, celery, two carrots, onion, one parsley, parsley and spices in a pot.
  • Pour in 1.5 liters of cold water and bring to a boil.
  • Let it cook for at least 2 hours.
  • In the meantime, prepare the chicken livers and breasts and blend them.
  • Add breadcrumbs with milk, pepper and salt to taste.
  • Add the egg yolks, crushed garlic, parsley and marjoram.
  • Mix everything and let it rest in the fridge for about an hour.
  • Strain the finished broth and discard the cooked vegetables.
  • Bring the finished soup to a boil again and throw in the chopped fresh carrots, celery and parsley into small cubes.
  • Form small gnocchi from the liver mass and cook them in the broth until they float to the surface (about 5 minutes of cooking).
  • Salt and pepper the soup to taste and finally add chopped fresh parsley.

Chicken broth with embedded egg

Eggs will add the right flavor to your broth. Try this recipe and make a soup that you can enrich just by dipping an egg into it.

Ingredients

  • 500g of chicken giblets or thighs
  • 2 pieces of carrots
  • 1 piece of celery
  • 1 piece of parsley
  • 1 large onion
  • 6 balls of whole pepper and 4 balls of allspice
  • 2 bay leaves
  • 50g of butter
  • Flour
  • 1-2 eggs
  • salt and pepper

Method

  • Place the chicken together with the chopped root vegetables in a larger pot.
  • Cover everything properly with cold water and bring to a boil.
  • Cook for about 2 hours and add the whole pepper, allspice and bay leaves 30 minutes before the end.
  • After cooking, remove the meat and vegetables and chop them into the soup.
  • Salt and pepper the soup to taste.
  • Make a soup out of butter and flour to thicken the soup.
  • Cook for a few minutes and in the meantime beat the eggs in a mug.
  • Finally, pour the beaten eggs into the soup with a fork.
  • Season the soup and garnish with parsley.

Chicken broth with homemade noodles

Homemade noodles that are difficult to prepare? Not with our recipe! Cook an honest broth with your own home-made noodles, with which you will surprise your diners.

Ingredients for soup

  • 500g of chicken giblets/bones
  • 1 piece of carrot
  • 1 piece of parsley
  • 1/2 piece of celery
  • 1 large onion
  • 4 balls of allspice
  • 6 whole pepper balls
  • 2 bay leaves
  • Parsley
  • Salt and pepper

Noodle ingredients

  • 1 egg
  • 4 tablespoons of coarse flour

Method

  • Place the chicken giblets or bones in 1 liter of cold salted water.
  • Cook for a while and then add the cleaned root vegetables.
  • Boil for at least an hour and a half and then add the spices.
  • Cook for another 30 minutes.
  • Meanwhile, prepare the noodles by sifting the flour, adding the eggs and making the dough.
  • Roll out the dough into a thin sheet and let it dry.
  • Then you cut it into equally wide slabs.
  • Place the plates on top of each other and cut into thin strips (or use a noodle grinder).
  • When the broth is ready, remove the meat along with the vegetables and spices.
  • Chop the vegetables and the skinned meat and put them back into the soup.
  • Season the broth with salt and pepper and bring to a boil.
  • Add a handful of prepared noodles, stir the soup and let it “finish”.
  • Finally, garnish the finished soup with green parsley.
