INGREDIENTS
- 2 large chicken breasts
- 300 g of small potatoes
- 1 green pepper, thinly sliced
- 1 onion, cut into rings
- 1 carrot, cut into strips
- 1 tablespoon of grated garlic
- 5 tablespoons of olive oil
- herbs (1/2 teaspoon basil, parsley, oregano, thyme)
- salt and pepper
METHOD
- Preheat the oven to 200 °C.
- Wash the chicken breast, cut it into 4 equal thin slices.
- Tap, salt and pepper.
- Clean and prepare the vegetables.
- Put the chicken breast, vegetables, herbs and olive oil in a bowl and mix everything well.
- Prepare a foil and put one piece of chicken breast and part of the vegetables in it.
- Divide everything evenly into 4 parts.
- Wrap the packages and bake for 35 – 45 minutes at 180 °C.

Chicken meat in BBQ marinade
These easy chicken packets in BBQ sauce can be baked in the oven or prepared on the grill. It’s an easy meal that requires just a few ingredients and tastes delicious!
Ingredients
- 4 pieces of chicken drumsticks and 4 pieces of bone-in, skinless thighs
- 1 teaspoon of salt
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried garlic
- 3 cups frozen vegetable mix
- 1/2 cup of your favorite BBQ sauce
- chopped fresh parsley for garnish
- 4 pieces of aluminum foil, 30 x 45 cm
Method
- Preheat the grill to a medium-high temperature or the oven to 220 degrees Celsius.
- We cut four large pieces of aluminum foil measuring 30 x 45 cm and spread them on a flat surface.
- Place 3/4 cup of frozen mixed vegetables in the center of each piece of foil.
- Season the chicken with salt, dried garlic and paprika.
- Brush both sides of the chicken with 1/4 cup BBQ sauce and place 2 pieces (1 drumstick, 1 leg) in the center of each foil packet.
- We lift the long sides of the foil so that the ends touch above the food.
- We fold the ends twice, leaving space for the heat to circulate inside.
- We fold the two short ends twice to seal the package tightly so no steam escapes.
- If grilling the packages, place them on a preheated grill over medium-high heat and grill, covered, for 50 to 55 minutes, or until the chicken is cooked through and reaches an internal temperature of 71 degrees Celsius when tested with an instant-read thermometer.
- Remove from the grill and carefully open the packages.
- Brush the chicken with the reserved BBQ sauce and grill uncovered for another 5 minutes.
- If necessary, garnish with fresh parsley.
- If we bake the packages in the oven, preheat it to 220 degrees Celsius.
- Place the packets on a baking sheet and bake for 50 to 55 minutes, or until the chicken is cooked through and tender and reaches an internal temperature of 71 degrees Celsius using an instant-read thermometer.
- Take the tray out of the oven.
- Carefully open the foil and coat the chicken with the remaining BBQ sauce.
- Bake uncovered for 5 minutes and garnish with fresh parsley as needed.

- 4 pieces of 40×40 cm extra thick aluminum foil
- 4 pieces of 170-230 g boneless and skinless chicken breasts
- 2 tablespoons of olive oil
- 1 teaspoon of garlic salt
- ½ teaspoon of freshly ground black pepper
- 3 medium zucchini thinly sliced
- 1 large red pepper, cut into 2.5 cm pieces
- 1 large green pepper cut into 2.5 cm pieces
- 3 large ears of corn (fresh or frozen), cut into 12 equal pieces
- 1 large red onion, thinly sliced
- ½ cup Asian or Thai sweet chili sauce
- ⅓ cup canned pineapple
- 3 tablespoons of cane sugar
- 3 tablespoons of teriyaki sauce
- 1 teaspoon of apple or rice wine vinegar
Method
- Preheat the oven to 200 °C.
- Spray the centers of 4 pieces of extra thick aluminum foil with spray oil. (If using regular tin foil, use a double batch.)
- Divide the zucchini into 4 tins and arrange them in one layer.
- Place the pepper on top of the zucchini.
- Season with garlic salt and pepper to taste.
- Rub the chicken breasts with oil and season all sides with garlic salt and pepper.
- Place one piece in the center of the vegetable.
- Arrange 3 pieces of corn and onion around the chicken.
- In a small bowl, whisk together the sweet chili sauce, pineapple, cane sugar, teriyaki and vinegar.
- Whisk until the sugar dissolves. brush each piece, reserving about ¼ cup to use at the end of baking.
- We connect the 2 edges of the foil and fold it so that there is an air pocket around the chicken.
- Crimp the edges to seal.
- Place the packages on a rimmed baking sheet.
- Bake for 40 minutes.
