- 400-500g of chicken breast
- 1-2 potatoes (diced)
- 1 broccoli
- 1 red pepper (diced)
- 1 zucchini (cut into half moons)
- 1 small yellow pumpkin (diced)
- 3 tablespoons of olive oil
- 2 teaspoons of salt
- 3/4 teaspoon pepper
- Zest and juice of 1 lemon
- 2.5 teaspoons of Italian seasoning
- 1 teaspoon of dried garlic
- Parmesan, grated
Method
- Preheat the oven to 200°C.
- Place the sliced potatoes in a bowl, drizzle with a tablespoon of olive oil and sprinkle with a teaspoon of salt and 0.5 teaspoon of pepper. Thoroughly coat in spices and spread out on a greased baking sheet.
- Bake for 10 minutes. Cut the meat into strips.
- Meanwhile, place the chicken noodles, broccoli, bell pepper, zucchini and yellow squash in a bowl.
- Drizzle with remaining 2 tablespoons olive oil, add lemon zest and juice, Italian seasoning, garlic powder, and remaining 1 teaspoon salt and remaining pepper.
- Spread the chicken with the spices on the baking sheet with the potatoes and mix.
- Return the tray to the oven and bake for another 15 to 20 minutes. Stir at least once during baking.
- Meanwhile, cook the rice.
- Finally, sprinkle with parmesan. Serve with boiled rice.

Ingredients
- 500g chicken breast, cut into strips
- 1 onion

- 400g of chicken breast
