Chicken quarters on vegetables

You will love this dish not only because of its great taste, but also because you only need one pan to prepare it. So you don’t have to worry about the amount of dirty dishes.

Ingredients:

  • 6 Chicken Thursdays
  • 4 potatoes
  • 2 carrots
  • 2 onions
  • 1 bell pepper
  • 5 cloves of garlic
  • 1/2 cup white wine
  • 1/3 cup butter
  • caraway seeds
  • barbecue spices
  • sweet pepper
  • salt pepper

Method:

  1. Wash and clean the chicken quarters thoroughly. Alternatively, you can cut them on the inside near the bone so that the bone is visible. The meat will then be cooked better.
  2. Mix the melted butter and spices in a bowl.
  3. Wash the vegetables, peel the garlic, onions and carrots, but not the potatoes.
  4. Then cut the vegetables into pieces. The size depends on your preference.
  5. Place the vegetables in a baking dish or a deep tray and then place the chicken quarters on it.
  6. Pour in white wine and then pour approximately three-quarters of the prepared butter and spice marinade over it.
  7. Bake in an oven preheated to 200°C for approximately 20 minutes.
  8. After this time, brush the meat with the remaining marinade once more and then bake for another 25 minutes.

You can eat the chicken quarters prepared in this way on their own, or they can be served together with rice.

Baked chicken quarters

A simple recipe that even a complete kitchen beginner can handle. The resulting dish will amaze you with its juiciness and fragility.

Ingredients:

  • 4 chicken quarters
  • 1 tbsp Italian seasoning
  • 2 tablespoons of olive oil
  • 1 teaspoon sweet paprika
  • 1 teaspoon of dried minced garlic
  • 1/2 teaspoon of black pepper
  • 1/2 teaspoon chili
  • 1 teaspoon of salt

Method:

  1. Wash and dry the chicken quarters.
  2. In a bowl, mix the individual spices with olive oil.
  3. Then work the mixture into the meat thoroughly from all sides using a brush or spoon and your hands.
  4. Put the chicken quarters in the fridge for at least an hour.
  5. Let it sit in the refrigerator for at least 1 hour.
  6. Then put the meat on a tray lined with baking paper and bake in a preheated oven at 200°C until soft and golden, approximately 45 minutes.

This dish tastes great with, for example, American potatoes or a vegetable salad.

Stewed chicken quarters on carrots

Stewing is one of the healthiest ways to prepare meat. In addition, the chicken does not need to be stewed for too long to be tender. A healthy and tasty dish is ready in no time!

Ingredients:

  • 4 chicken quarters
  • 1/4 cup olive oil
  • 2 cups hot water
  • 1 onion
  • 3 carrots
  • 1 teaspoon of dried minced garlic
  • 1 tbsp ground onion powder
  • 2 tablespoons of ketchup
  • salt pepper

Method:

  1. Put the washed chicken quarters in a bowl, salt, pepper and sprinkle with dried garlic and onion.
  2. Afterwards, leave the bowl in the fridge for approximately 2 hours to allow the spices to work better into the meat.
  3. Heat a quarter of the oil in a pan and lightly fry the chicken quarters on all sides.
  4. Then remove the meat and put the diced carrot and onion into the pan.
  5. Simmer for a few minutes, then add the rest of the oil and ketchup to the pan.
  6. Mix thoroughly and add the chicken back to the pan as well.
  7. Add two cups of hot water, cover with a lid.
  8. Simmer for approximately 45 minutes, stirring occasionally.

Steamed chicken pieces are best served with rice.

Grilled chicken pieces with herbs

The delicate taste of chicken goes well with various herbs, especially thyme and rosemary. Prepare a marinade full of herbs, the chicken will smell nice and you won’t be able to wait to taste it.

Ingredients:

  • 4 chicken quarters or chicken thighs or wings
  • 1 teaspoon of red pepper
  • 1 teaspoon of fennel seeds
  • 1 teaspoon of coarsely ground black pepper
  • 1 teaspoon of salt
  • 1 tbsp fresh rosemary, finely chopped
  • 1 tbsp fresh thyme, finely chopped
  • 2 cloves of crushed garlic
  • 1 and 1/2 tbsp brown sugar

Method:

  1. Thoroughly grind all the spices in a mortar.
  2. Subsequently, mix this mixture with the other ingredients, i.e. sugar, herbs and garlic in a bowl into a fine paste.
  3. Clean, wash and thoroughly coat the chicken quarters with the prepared spice and herb paste.
  4. Set aside for at least two hours, preferably overnight, in the refrigerator.
  5. Then light the grill and place the chicken quarters on it, skin side down.
  6. Grill for approximately 25-30 minutes.
  7. Turn the meat regularly during grilling.
  8. Let the meat rest for 5 minutes before serving, the flavor of the herbs will stand out better.

Asian style chicken pieces

Ingredients:

  • 4 chicken quarters or thighs
  • 1/4 cup soy sauce
  • 3 tbsp brown sugar
  • 2 tbsp chopped coriander
  • 1 tbsp grated ginger
  • 1 tbsp chopped basil
  • 1 teaspoon chili sauce
  • zest and juice of 1 lime
  • 2 cloves of crushed garlic
  • 2-3 tablespoons of olive oil
  • salt pepper

Method:

  1. Clean the chicken quarters and remove any excess fat.
  2. Mix all the above-mentioned ingredients for the marinade, i.e. spices, herbs, sugar, soy sauce and oil, and place in a resealable plastic bag.
  3. Then add the chicken quarters to the bag and mix well to coat the meat on all sides with the marinade.
  4. Place in the fridge and marinate for at least 4 hours.
  5. You can then bake the chicken quarters prepared in this way on the grill or in the oven. The baking time should be approximately 30 minutes.

You can serve Asian-style chicken with rice or vegetable salad and fresh bread.

Preparation of chicken Thursdays

If you prefer smaller pieces of chicken, it is advisable to cut the chicken quarters into portions before cooking. For frozen meat, let it thaw at room temperature before slicing.

As for the spine parts and skin, it’s up to you whether you choose to remove them or not. The most common way to prepare chicken Thursdays is baking or grilling. But they can also be stewed or boiled and the meat from them can be used, for example, in risotto or soup.

Serving tips

The type of side dish you choose for chicken quarters depends on the method of preparation. Roasted or grilled meat is best served with American potatoes and French fries, or just a vegetable salad with fresh bread.
