  • ¾ chopped green peppers

For the topping:

  • ¼ cup olive oil
  • 2 tablespoons of red wine vinegar
  • ½ teaspoon ground cumin
  • salt and pepper

Method:

  • In a bowl, mix chopped avocado, onion, cucumbers, tomatoes, arugula, bell pepper, chickpeas and lemon.
  • In a second bowl, prepare the dressing by mixing all the ingredients.
  • Add the finished dressing to the chopped vegetable mixture and mix.
  • Put it in the fridge for at least an hour.

  • 250 g of red cherry tomatoes
  • 250 g of yellow cherry tomatoes
  • 1 salad cucumber
  • 1 can of chickpeas
  • 1 bunch of parsley
  • 60 g of feta cheese

For the topping:

  • ¼ cup olive oil
  • 2 tablespoons of red wine vinegar
  • 1 spoon of honey
  • lemon juice
  • salt and pepper

Method:

  • Cut the tomatoes in half, cut the salad cucumber into cubes, finely chop the parsley, pour everything into a large bowl.
  • Add a can of drained chickpeas and crumble the feta cheese.
  • In a small bowl, mix the lemon juice, a spoonful of red wine vinegar, honey, olive oil and pepper.
