For the topping:
- ¼ cup olive oil
- 2 tablespoons of red wine vinegar
- ½ teaspoon ground cumin
- salt and pepper
Method:
- In a bowl, mix chopped avocado, onion, cucumbers, tomatoes, arugula, bell pepper, chickpeas and lemon.
- In a second bowl, prepare the dressing by mixing all the ingredients.
- Add the finished dressing to the chopped vegetable mixture and mix.
- Put it in the fridge for at least an hour.
