Mom always made this special mayonnaise cake for my birthday! The dough is very moist and has a nice light chocolate flavor and the frosting? She is perfect.
What will we need
- 300 ml of water
- 250 ml of mayonnaise
- 1 teaspoon of vanilla extract
- 500 g plain flour
- 250 g of sugar
- 3 spoons of cocoa
- 2 teaspoons of baking soda
For the brown sugar frosting
- 125 g of brown sugar
- 80 g butter, cut into cubes
- 2 tablespoons of milk
- 300 g of granulated sugar
Method
- In a large bowl, combine the water, mayonnaise and vanilla.
- In a large bowl, combine the flour, sugar, cocoa and baking soda.
- Then mix the dry ingredients into the mayonnaise mixture.
- Pour the batter into the greased tin and bake for 30-35 minutes at 180°C until a toothpick inserted in the center comes out clean.
- Remove from the oven and do not want the cake to cool completely.
- For the frosting, boil and mix the brown sugar and butter in a small saucepan.
- Remove from the heat and stir in the milk.
- Gradually add granulated sugar and beat until smooth.

What will we need
- 250 g of butter
- 170 g of powdered sugar
- 210 g of chocolate with a cocoa content of more than 70%
- 5 eggs
- 1 tablespoon of rum
- 100 ml whipping cream
- a piece of butter and a handful of cane sugar to fill the mold
- a few mint leaves for garnish
Method
- We prepare a cake mold with a diameter of 24 cm, grease it with butter and sprinkle it with cane sugar.
- Put the egg yolks with sugar in a bowl and beat a thick light foam, into which we finally mix the rum.
- Whip the egg whites into stiff snow, which we will set aside for now.
- Let the butter and chocolate melt in a water bath, let it stand for a while and then whisk it into the yolk mixture in parts.
- Finally, carefully mix in the egg whites to combine everything.
- Once we are done, pour the dough into the mold and put it in the oven preheated to 180°C.
- Bake for approximately 25 to 30 minutes, depending on the type of oven.
- After baking, let the cake cool down. Once it’s cool, put it in the fridge and let it sit for a few minutes.
- Before serving, whip the cream and use it to decorate the cake. Put mint leaves on the scoops of cream.

- We will need a cake mold (20 – 26 cm), which we will grease, fill, set aside for now and preheat the oven to 160 °C
- We take a glass bowl suitable for the microwave oven, put chocolate and butter in it and let it melt in the microwave for a minute.
- Remove the bowl and mix thoroughly until the butter and chocolate are completely combined.
- Mix the coffee in water and mix it into the chocolate, then let it cool.
- Pour ground nuts, flour, salt into another bowl, mix and let stand.
- Beat the eggs with the sugar until foamy and gradually add the cooled chocolate mixture. Stir the whole time.
- When it is thoroughly mixed, add the loose ingredients that we mixed before and mix well.
- Pour the dough onto a baking sheet and place in the preheated oven. Let it bake for 30 – 45 minutes. Leave the baked goods to cool completely.
Procedure – frosting
- First, mix the ricotta with powdered sugar, then clean the strawberries and cut them into slices.
- Pour the cream into a bowl suitable for microwave ovens, put it inside and bring to a boil.
- Take the cream out of the microwave, break the chocolate into it, mix and let it stand for 5 minutes.
- Beat with a mixer (whisk) and let it cool, this will thicken the frosting even more.
- When we have all this ready, we will start the finishing works.
- Remove the cake from the mold and cut it in half lengthwise. Spread the filling on the lower part, spread the strawberry slices on it and fold the other part of the body.
- Cover the surface of the cake with chocolate glaze and decorate with fresh fruit.
- If you want, you can still whip the whipping cream and decorate with dollops of whipped cream.

Luxurious chocolate cake with cream

- We knead the dough so that it is shaped according to the form, and then make a 3 – 3.5 cm high border all around.
- Pierce the dough with a fork and let it rest in the refrigerator for 30 minutes.
Procedure – cream
- While the dough rests, we start preparing the cream. Separate the yolks from the whites and beat them until stiff.
- Add cottage cheese, milk, lemon juice, 200 g of sugar, custard powder to the yolks and whisk everything together.
- Finally, carefully mix in the egg whites, mix and divide into halves.
- Add cocoa to one half and leave the other as it is.
- Spread the light part of the cream on the dough, lightly top it with the dark cream and put it in the heated oven.
- Bake for approximately 45-50 minutes at 180°C. After removing from the oven, let it cool before slicing.
- If you want, you can cover the cake with chocolate frosting, put whipped cream on top or decorate it with cocoa cream.
