Method

  • Mix the almonds, icing sugar, flour, vanilla paste and salt.

  • Wrap the dough in foil and let it rest for half an hour.
  • Divide the dough into 4 parts and shape each into a roll with a diameter of 1-2 cm and cut into 5 cm wide strips.
  • Bake the sticks in the oven at 180 degrees top/bottom heat for about 10 minutes. Allow the bars to cool completely.
  • Melt the chocolate glaze in a water bath and dip the almond sticks in it and let them dry on a baking sheet lined with baking paper.

  • 70 grams of sugar

What will we need

  • 230 g, very finely chopped
  • 160 ml of heavy cream
  • 1 tablespoon butter, softened

Method

  • Place the chocolate in a heatproof bowl.
  • Heat the heavy cream.
  • Add butter to the chocolate and pour in thick cream.
  • Let the mixture sit for 5 minutes.
  • Add the vanilla extract and stir until the chocolate is completely melted.
  • Place a piece of plastic wrap directly on top (to prevent condensation) and refrigerate for 1-2 hours.

What will we need

  • 4 tablespoons water (boiling)
  • 40 g of cocoa powder
  • 3 large eggs
  • 175 g butter (softened)
  • 165 g of powdered sugar
  • 115 g plain flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of baking powder

For the cream

  • 60 g butter (softened)
  • 30 g of cocoa powder
  • 3 tablespoons milk (full fat)
  • 250 g of powdered sugar

Method

  • Line the muffin tin with paper cups.
  • Sift the cocoa powder into a bowl, cover with boiling water and mix to a thick paste.
  • Add the remaining ingredients and mix.
  • Divide the dough into molds.
  • Bake in a preheated oven at 200°C for about 12-15 minutes until risen and springy to the touch.
  • Mix the butter, sift the cocoa and mix in the powdered sugar a little at a time to make a spreadable cream.
  • If it is too thick, gradually add milk until it reaches the desired consistency.

What will we need

  • 140 g plain flour
  • 2 packets of vanilla sugar
  • 1 egg yolk
  • 100 g of softened butter
  • 90 g ground hazelnuts
  • 40 g of grated chocolate

Method

  • Sift the flour and make a mound of it on the roll, in the center of which make a hole. Put vanilla sugar, egg yolk, a piece of butter, ground hazelnuts and grated chocolate in the hole.
  • Gradually make a smooth dough from the entire scoop of flour onto the roll. Put the finished dough in the refrigerator for 30 minutes.
  • Roll the dough into snakes about the size of a pencil and cut them into pieces about 6 centimeters long.
  • Shape them into horseshoes, place them on a baking sheet lined with baking paper.
