Some final tips and tricks
The basis of a good chocolate coating for cookies is high-quality chocolate or unsweetened cocoa powder. It might surprise you, but the popular cooking chocolate is not quite suitable for making glazes. It is much better to use high percentage dark chocolate.
Most often, chocolate is melted in hot whipping cream. The key to success is slow but consistent mixing. If you want, you can melt the chocolate beforehand in a water bath. This means bringing a pot of water to the boil, placing a bowl of chocolate on it and stirring slowly. If it happens that the frosting curdles, for example, due to cold cream, just whip a piece of butter into it over a water bath.
You can use chocolate frosting for cookies in different ways. The easiest way is to partially soak the candy in them. But you can also use decorations and create interesting drawings. In this case, it is better to put the pastry on a wire rack and place baking paper under it before decorating. It will make it easier for you to clean up afterwards.
