INGREDIENTS

  • 600 g of white asparagus
  • 1 onion
  • 1 dl white wine
  • 1 cup of sweet cream
  • 30 g of butter
  • 1 teaspoon of lemon juice

METHOD

  1. We have to prepare the asparagus by peeling it.
  2. Fry the chopped onion in butter and add the chopped asparagus.
  3. Add salt and pepper and add white wine.
  4. Bring to a boil and add about half a liter of hot water.
  5. Cook everything until the asparagus is soft. It only takes about 9 minutes.
  6. Then we blend the soup with a stick blender into a smooth cream.

INGREDIENTS

  • about 20 asparagus shoots – white or green
  • 3 egg yolks
  • 50 ml of broth
  • 50 ml of white wine
  • white pepper

METHOD

  2. Clean and peel the asparagus and cut off the woody ends.
  3. Mix the yolks in a water bath with white wine and broth.

INGREDIENTS

  • 500 g of asparagus
  • 250 g of tomatoes
  • 2 eggs
  • 1 cup of white yogurt
  • 1 cup of sweet whipping cream
  • 1 teaspoon of lemon juice

METHOD

  1. Hard-boil the eggs.

Asparagus risotto

  • about 300 g of asparagus
  • 1 onion
  • spoon of butter
  • 2 tablespoons of oil
  • 2 cloves of garlic
  • 2 tablespoons of parsley
  • 300 g of rice
  • 100 ml of white wine
  • 100 g of Parmesan cheese
  • 1 l vegetable broth or water

METHOD:

  1. First we prepare the rice. In a pot, fry the chopped onion and the rubbed garlic in the oil, and add the rice to it.
  2. Add wine and water and simmer for about 15 minutes.

How to prepare asparagus before cooking?

In order for asparagus to really taste good, we need to know how to prepare it. Asparagus requires heat treatment by cooking.

Before cooking, we clean it, cut off the lower, usually woody part and leave only the shorter part from the head, i.e. about 8-10 cm.

The heads are the most valuable on asparagus, so we peel the asparagus thinly from the heads down. After peeling, rinse it with cold water.

We then tie the washed asparagus with bast or thread into small bunches or sticks, about 10-15 pieces each.

Place the prepared asparagus in boiling salted water and cook for 15-20 minutes until soft. Then we prepare it in different ways.

Asparagus and its characteristics

Few people know that kitchen asparagus is very closely related to the well-known house flower and accessory of tied bouquets, which is commonly called asparagus. However, special varieties were grown for kitchen use.
