Ingredients

  • 200g almond flour (or finely ground almonds)
  • 40g of coconut flour
  • 100g of softened fat (e.g. Hera)
  • 2 eggs
  • 1/2 teaspoon of baking powder
  • 30g powdered sugar + for coating
  • Pinch of salt
  • 1/4 teaspoon of vanilla extract
  • Organic lemon peel

Method

  • Mix all dry ingredients in a bowl. Then add the eggs, mix with a wooden spoon and add the softened fat cut into smaller pieces.
  • Use your hands to form a smooth uniform dough. Make a ball that is a little sticky and put it in the fridge for 2-3 hours.
  • Then divide the hardened dough into 4 parts. Peel off pieces of dough from each part, form a ball from it, roll it into a rolling pin and bend the edges into the shape of rolls on the baking sheet.
  • If your dough is too crumbly, add an extra egg yolk. If, on the other hand, it is too wet, add more coconut flour.
  • Bake at 160°C for approximately 10-12 minutes, depending on the type of oven and the thickness of the rolls. Keep an eye on the rolls.
