Ingredients:

  • 1 large avocado
  • 1/4 cup + 2 tbsp unsweetened cocoa powder
  • 1/2 teaspoon of vanilla extract
  • 1 teaspoon of almond extract
  • 2/3 cup chocolate chips
  • 1/2 teaspoon of coconut oil
  • 1/2 cup coconut flakes

Method:

  1. Blend the peeled and pitted avocado in a food processor until smooth.

  3. In a medium bowl, combine the chocolate chips and coconut oil and heat them in the microwave for about a minute and a half until the chips melt.

  9. Bake in an oven preheated to 180°C for approximately 10 minutes or until golden. After removing from the oven, the gingerbread should still be slightly soft.
  10. Let the gingerbread cookies cool and melt the white chocolate in the meantime.

  4. Then slowly add the dry ingredients to this bowl until you have a dough. The dough may seem crumbly at first, but keep mixing and kneading until the ingredients come together.
  5. At this point you can add food coloring. We recommend starting with just a few drops, you can also create more colors by dividing the batter into halves or thirds.
  6. Make a ball from the dough, wrap it in cling film and put it in the fridge for 30 minutes.
  7. After this time, remove the dough from the refrigerator.
  8. Sprinkle coconut flour over the rolling pin and roll out the dough with a rolling pin until it is about one centimeter thick. If the dough is too sticky, sprinkle more coconut flour over it.
  9. Use various cookie cutters to create cookies and then place the individual shapes on the baking sheet.
  10. Bake in the preheated oven for approximately 6-8 minutes or until the cookies begin to brown.
  11. Let these flourless Christmas cookies cool for at least 30 minutes before frosting.
  12. In the meantime, prepare the frosting. Add water to the powdered sugar spoon by spoonful and mix. Add enough water until you reach the desired consistency.
