Cherry cake with crumble

Cake with cherries and crumb is sour, sweet and is a perfect combination of crumbly dough and delicate filling. The crumb gives it a delicious, buttery crunch.

What will we need

For the pie

  • 1 kg pitted cherries
  • 150 g of granulated sugar
  • 30 g cornstarch
  • 1 tablespoon of lemon juice
  • 1 teaspoon of vanilla extract
  • ½ teaspoon of almond extract
  • 1 puff pastry

On a dime

  • 6 tablespoons of butter
  • 60 g of brown sugar
  • 90 g coarse flour
  • ½ teaspoon of vanilla extract
  • 1 teaspoon of ground cinnamon

Method

  • Preheat the oven to 180 degrees.
  • If your cherries are frozen, make sure you thaw them completely and get rid of most of the liquid.
  • Add cherries, sugar, cornstarch, and lemon juice to a medium saucepan.
  • Cook over low heat, stirring occasionally, until the cornstarch and sugar dissolve and the mixture thickens.
  • Remove from heat, stir in vanilla and almond extract and set aside.
  • Roll out the puff pastry.
  • Place the dough in the pie pan and press it into the pan.
  • Prepare the crumb. Melt the butter. Mix brown sugar, flour, vanilla extract and cinnamon into the melted butter. Mix until soft crumbs form.
  • Pour the cherry filling into the prepared crust.
  • Sprinkle the crumble on top.
  • Bake until the crumb is browned and the filling is bubbling, 50 to 60 minutes.
  • Check the cake during baking and if the surface is browning too much, cover it with foil for the rest of the baking time.
  • Let the cherry pie cool for 15 minutes.
  • Serve with vanilla ice cream or whipped cream.

Cherry cake with cottage cheese and chocolate

Homemade cottage cheese on top of a sweet chocolate crust. You must be salivating just thinking about it!

What will we need

For the pie

  • 24 chocolate chip cookies like Oreos
  • ¼ teaspoon salt
  • 6 tablespoons of melted butter

For cottage cheese

  • 400 g of cherries
  • 120 g of sugar
  • 4 large egg yolks
  • ¼ cup cornstarch
  • 1 teaspoon of vanilla extract
  • ½ teaspoon of salt
  • 2 tablespoons of soft butter
  • 100 g of cottage cheese

For decoration

  • 400 g of cherries
  • Whipped cream
  • Melted dark chocolate

Method

  • Heat the oven to 180 degrees.
  • Grease the cake pan with butter.
  • Put the cookies in a food processor and blend them into a fine crumb.
  • Add 6 tablespoons of melted butter while mixing until combined.
  • Pour the mixed cookies into the cake pan. Using your fingers, spread the crumbs into a single layer and press to firm.
  • Bake the crust for 8 to 10 minutes, or until the center is shiny. Set aside to cool completely.
  • Blend the cherries in a food processor and pour them into the pot.
  • Add the sugar, egg yolks, cornstarch, vanilla extract and salt and mix to combine.
  • Bring the mixture to a boil over medium heat, stirring constantly.
  • When the mixture comes to a boil, thickens, remove the pot from the heat.
  • Strain the cherry mixture into a large bowl and whisk in 2 tablespoons of the softened butter and the cottage cheese.
  • Carefully pour the warm filling into the crust and smooth it out.
  • Transfer the cake to the refrigerator and let it set, at least 3 hours.
  • Decorate the cake with drained dark cherries, whipped cream and melted chocolate as desired.

Mug cake with cherries

A simple version of the recipe for a cherry pie, which looks really fabulous thanks to the meringue.

What will we need

For the dough

  • 2 cups semi-coarse flour
  • 1 cup granulated sugar
  • 1/2 cup of milk
  • 125 g of butter
  • 3 spoons of cocoa
  • 1 baking powder
  • 1 egg

Meringue

  • cherry marmalade on top of the cake
  • 200 g granulated sugar
  • 4 egg whites
  • 2-3 tablespoons of potato starch
  • 1 tablespoon of vinegar

Method

  1. Mix the loose ingredients, i.e. flour, sugar, cocoa and baking powder.
  2. Add milk, butter and eggs and make a dough.
  3. Pour the mixture into a pre-greased mold and put it in an oven heated to 180 °C. Bake for about 20 minutes.
  4. Next, we will prepare the meringue. Beat the egg whites with sugar and potato starch until stiff.
  5. Let’s go back to the dough. Spread with cherry marmalade (don’t skimp on it, you can spread a good layer).
  6. We apply meringue on top, ideally using pastry tools to create meringues, roses or other favorite shapes.
  7. Put it in the oven again, this time at a lower temperature (150 °C). Bake again for about 20 minutes until the surface turns pink.
  8. Let it cool slowly – the crust could crack if it cools down too quickly.

A lattice cake is also an excellent option. The choice of filling is up to you.

What will we need

For the dough

  • 400 g puff pastry

For filling

  • 600 g of cherries
  • ½ teaspoon ground cinnamon
  • Pinch of salt
  • 1 teaspoon of lemon juice

For the frosting

  • 120 g of coconut
  • 60 g of sliced almonds
  • 30 g of sugar
  • pinch of salt
  • 40 ml of milk
  • 1 tablespoon of melted butter
  • ½ teaspoon of almond extract
  • 1 egg, beaten

Method

  • Heat the oven to 200 degrees.
  • Place the puff pastry in the cake pan.
  • In a large bowl, mix all the ingredients for the filling.
  • Then layer the mixture on top of the dough.
  • Cover the edges with foil to prevent excessive browning or burning.
  • Bake the cake for 20 minutes.
  • Meanwhile, in a medium bowl, mix all the topping ingredients.
  • Spread the frosting evenly over the pie and bake for an additional 15 to 30 minutes longer, or until the crust and frosting are golden, removing the foil during the last 10 to 15 minutes of baking.
