  • 500 g plain flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 2 teaspoons gingerbread spice
  • 1 spoon of cocoa
  • 180 g of powdered sugar
  • 160 g of softened butter
  • 2 egg yolks
  • 4 spoons of honey
  • 1-2 tablespoons of water as needed

  • Mix the flour with gingerbread spices, sugar, cocoa, soda and baking powder.
  • Then add butter cut into cubes and egg yolks.
  • Make the dough (if it is too loose, add a little water).
  • Let it sit in the cold for at least 2 hours.
  • We roll out the dough into a roughly 5 mm thick pancake and cut out shapes.
  • Bake in an oven heated to 160 °C for about 8-10 minutes.

The recipe for Christmas gingerbread with honey is one of the most popular. This version is additionally enriched with almonds.


  • 75 g of butter
  • 125 g of honey
  • 50 g of brown sugar
  • 1 egg white
  • 200 g plain flour
  • 100 g ground almonds
  • 2 teaspoons of gingerbread spice

  • 2 teaspoons of baking powder


  • Melt the butter and sugar in a saucepan.
  • After cooling, add the egg white and beat, then add honey and sprinkle ground almonds and flour mixed with salt, spices and baking powder.
  • We make the dough and put it in the fridge to cool for two hours.
  • Then we roll it out into a thin pancake and cut out different shapes.
  • Bake in an oven heated to 200 °C for about 5 minutes.

Are you in the mood for healthy gingerbread? In addition, they are completely gluten-free.


  • ¾ cup of dates
  • ½ cup coconut cream
  • ⅓ cup cashew butter
  • 3 tablespoons of molasses
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon ground ginger
  • 1 teaspoon gluten-free gingerbread spice
  • 3 tablespoons of coconut flour
  • ½ teaspoon of vanilla extract
  • 1 and ½ cups of broken dark chocolate

  • Put the dates, coconut cream and cashew butter in a blender and mix for about a minute.

  6. Place in a preheated oven at 180°C, bake for about 5 minutes – take them out as soon as they are golden.

Simple rum gingerbread cookies

Do you like rum-flavored cookies? Try this Christmas gingerbread recipe.


  • 500 g plain flour
  • 120 g of softened butter
  • 2 tablespoons of rum
  • 2 eggs
  • 1 teaspoon of cinnamon
  • 2 spoons of honey
  • 170 g of powdered sugar
  • 80 g ground almonds
  • 1 teaspoon of baking soda
  • 1 teaspoon gingerbread spice
  • 2 spoons of cocoa

Ingredients for the frosting

  • 400 g of powdered sugar
  • 4 tablespoons of rum
  • 7 tablespoons of hot water


  • Sift flour together with sugar and cocoa, add cinnamon, gingerbread spice, almonds, baking soda and mix everything.
  • Then add eggs and softened butter.
  • We shape the dough and let it rest for an hour.
  • Then we shape the dough into balls with a diameter of about 2 cm and place them on a baking sheet lined with baking paper.

You don’t have to travel far for Christmas gingerbread from Nuremberg. Their aroma can also appear in your kitchen.


  • 1 cup granulated sugar
  • 5 large eggs
  • 1 and ¾ cup ground hazelnuts
  • 1 and ¾ cup ground almonds
  • ½ cup candied lemon zest (finely blended)
  • ½ cup candied orange peel (finely blended)
  • 3 teaspoons of gingerbread spice
  • 1 teaspoon of lemon zest
  • Dark cooking chocolate (for coating)


  • Beat the eggs with the sugar to a white foam (let it sit for about 15 minutes).
  • Then add ground hazelnuts, almonds, candied lemon and orange peel, lemon peel and gingerbread spices.
  • Mix everything and let it sit in the fridge for about 10 hours.
  • Then, using a mug (about 6 cm in diameter), pre-draw circles on the baking paper.
  • We then add piles of dough to the individual circles.
  • Bake at 160 °C for about 22 minutes.

A common problem with hard gingerbread is that you add honey to your Christmas gingerbread recipe in good faith. But that is wrong, never give more than the prescribed dose.

If the gingerbread cookies happen to be hard, don’t give up just yet! Put them in a box and put a sliced apple in them and close it. The gingerbread will soak up the moisture from the apple and soften!

We store the finished gingerbread cookies in boxes and in a moist environment so that they soften.

Tips for decorating Christmas gingerbread

You can create beautiful ornaments with egg white icing, and sometimes quite simply. However, to make it all go well, you need the right consistency of the frosting as well as the ideal thickness of the line. In the end, it may look like the one you see in the picture.
