Ingredients:

  • 4 egg whites
  • 1 cup granulated sugar
  • 1 cup almonds
  • 1 cup hazelnuts
  • 1 teaspoon of pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • pinch of salt

Method:

  1. Preheat the oven to 175°C and line a tray with baking paper.
  2. Blend the almonds and hazelnuts in a food processor to obtain a coarsely ground texture. Alternatively, chop them by hand.
  3. Beat the egg whites until stiff.
  4. While whipping, first add a pinch of salt, cinnamon and vanilla extract.
  5. Then add sugar a spoonful at a time and beat until stiff peaks form.
  6. Finally, carefully mix the mixture of nuts and almonds into the resulting snow with a spoon.
  7. Using a spoon, form the mixture into cookies on the parchment paper.
  8. Dry in the preheated oven for approximately 20 minutes, until the top of the cookie begins to turn golden.

Ingredients:

  • 4 egg whites
  • 1 cup granulated sugar
  • 1 cup ground hazelnuts or walnuts
  • pinch of salt
  • 1/4 cup chopped hazelnuts for coating
  • chocolate topping

Cream

  • 3 egg yolks
  • 2 tablespoons of powdered sugar
  • 1 and 1/2 tbsp plain flour
  • 1/4 can of sweetened condensed milk
  • 3/4 cup milk
  • 8 tablespoons of butter
  • 1 teaspoon of vanilla extract

Method:

  1. Preheat the oven to 100°C and line a tray with baking paper.
  2. Use a hand whisk to whip the egg whites until thick.
  3. While whisking, gradually add sugar by spoonfuls.
  4. Then carefully mix the ground nuts into the thick snow with a spoon.
  5. Put the finished mixture in a pastry bag with a star tip.
  6. Gradually press the snow cookies onto the prepared baking sheet and then dry in the oven for approximately 90-100 minutes.
  7. Let the snow cookies cool and prepare the cream in the meantime.
  8. Beat the egg yolks, sugar and vanilla extract until smooth.
  9. Then add the flour and beat until smooth again.
  10. Heat the milk and add it a little at a time to the yolk mixture, whisking thoroughly after each addition.
  11. At the end, whisk the condensed milk into the resulting mixture.
  12. Then pour the mixture into a saucepan and cook, stirring constantly, for approximately two minutes.
  13. Allow to cool to room temperature.
  14. In the meantime, beat the butter and then beat in the cooled mixture.
  15. Subsequently, always glue two meringues together using the cream.
  16. Then wrap the exposed part of the cream in chopped nuts and decorate the tops with chocolate glaze.

  • 300 g of butter
  • 120 g of powdered sugar
  • 50 g plain flour

Method:

The secret of snow cookies

In order for the whipped egg whites to have the right consistency, proper attention must be paid to the preparation of the snow. There are two basic options for whipping egg whites with sugar. The classic option consists in whipping the egg whites themselves to a semi-solid state and then gradually adding sugar to them in small amounts. It is important to whip for a really long time. The second option is to whip the egg whites themselves again to a semi-solid state and then whip in a hot sugar syrup, which you prepare by boiling sugar with a little water.

The taste of this Christmas pastry can be easily made special by adding other ingredients to the basic recipe for snow cookies, i.e. a mixture of egg whites and sugar. Most often, various extracts are used, for example vanilla or almond, as well as chopped or ground nuts. But you can also use almonds or chocolate.

A great trick is to add a small amount of lemon juice to the snow to help make the mixture really dense and stiff. Ready-made snow cookies can be decorated not only with various sprinkles, but also with chocolate coating, chopped almonds or nuts.
