Charcoal spaghetti alla carbonara
Learn how to make this great recipe for Creamy Spaghetti with Cheese and Eggs, inspired by a favorite Italian dish. With the right technique, you can prepare it perfectly every time.
What will we need
- 100 g of smoked belly
- 50 g of pecorino cheese
- 50 g Parmesan cheese
- 3 large eggs
- 350 g spaghetti
- 2 large garlic cloves (peeled and left whole)
- 50 g of butter
- Sea salt
- Freshly ground black pepper
Method
- Boil a large pot of water
- Finely chop 100 g of smoked belly
- Finely grate 50 g of pecorino cheese and 50 g of parmesan cheese and mix
- Beat 3 large eggs in a medium bowl and season with a little freshly grated black pepper. Put everything aside
- Add 1 teaspoon of salt to the boiling water
- Add 350g of spaghetti and when the water returns to the boil, cook covered for about 10 minutes or until al dente
- Crush 2 peeled cloves of garlic with a knife blade
- While the spaghetti is cooking, fry the belly with garlic
- Put 50 g of butter in a large pan, and once the butter has melted, add the pork belly and garlic
- Let it cook on medium heat, stirring frequently, for about 5 minutes, until the belly is golden and crispy
- Now take out the garlic and throw it away
- We keep the temperature under the belly low
- When the pasta is ready, put it in the pan with the belly
- We don’t pour the water out of the pasta yet
- Mix most of the cheese with the eggs, reserving a small handful for sprinkling later
- Remove the pan with spaghetti and pork belly from the heat
- Now quickly pour in the egg and cheese, using tongs or a fork, mix the spaghetti with the egg mixture, which thickens and coats everything
- Add more pasta water to keep the charcoal spaghetti juicy and creamy
- Season with a little salt if necessary
- Serve the charcoal spaghetti immediately with some remaining cheese and ground black pepper

Coal-style spaghetti with English bacon
Just a handful of ingredients create a fantastic everyday pasta dish that will never let you down under any circumstances. This dish will be loved by young and old regardless of age!
What will we need
- 3 large egg yolks
- 40g Parmesan and extra for serving
- 150 g of English bacon
- 200 g of spaghetti
- Clove of garlic
- Extra virgin olive oil
Method
- Put the egg yolks in a bowl, finely grate the Parmesan, sprinkle with pepper, then mix well with a fork and set aside
- Cut the tough edges off the English bacon and set aside, then slice the meat
- Cook the spaghetti in a large pot of boiling salted water until al dente
- We will use the English bacon trimmings to brush the bottom of the pan (this will add a fantastic flavor, or we can use 1 tablespoon of oil instead)
- Then we turn on the temperature under the pan to medium high
- Peel the garlic and crush it with a knife
- Add it to the pan and let it season the fat in the pan for 1 minute
- Stir in the chopped bacon and cook for 4 minutes, or until golden and browned
- Remove the garlic and throw it out of the pan
- Then drain the spaghetti and add it to the pan with the bacon with a little cooking water
- Mix well so that they really absorb all the flavor
- Then take the pan off the stove
- Add a spoon to two spoons of pasta water and mix well
- Season with pepper and then cover with the egg mixture
- Mix well and add more pasta water until the mixture is creamy and glossy
- Coal spaghetti is served with grated parmesan cheese and extra pepper

What will we need
- 500 g dried spaghetti
- 250 g stewed ham (cut into cubes)
- 75 g Pecorino cheese (finely grated)
- 3 egg yolks
- 2 whole eggs
- Garlic clove (peeled and crushed with a knife)
- Salt
- Crushed black pepper
- Olive oil
Method
- In a bowl, beat 2 whole eggs and 3 egg yolks until the egg mixture is uniform
- Stir in 75 g of pecorino cheese and lightly season with black pepper
- Set the mixture aside
- Put the spaghetti in heavily salted boiling water and cook according to the instructions on the package until al dente (a little hard)
- Toward the end of cooking, collect a cup of pasta water that we will use later
- Add a teaspoon of olive oil to the pan and let it heat up on medium heat
- Then add a clove of finely pressed garlic and 250 g of stewed ham to the pan at a medium temperature
- Fry until the ham is nicely browned
- Remove the garlic and turn off the stove
- Add the spaghetti to the pan and immediately mix with the fried ham
- Add a drop of pasta water and continue mixing until the spaghetti is beautifully shiny

Learn how to make pasta at home! This 4-ingredient homemade pasta recipe is incredibly easy to make and produces delicious noodles every time.
What will we need
- 500 g semi-coarse flour
- 3 large eggs
- ½ teaspoon of sea salt
- ½ tablespoon of extra virgin olive oil
Method
- Pour the flour onto a clean work surface and make a pile
- Add the eggs, olive oil and salt to the center and gently beat the eggs with a fork so as not to disturb the pile
- We gently start adding flour to the egg with our hands to gradually incorporate it
- We continue to work the dough with our hands so that it comes together into a smooth ball
- Knead the dough for 8 to 10 minutes
- The dough should be crumbly at first
- The dough may not seem to come together, but after 8-10 minutes of kneading it should be uniform and smooth
- If the dough still seems too crumbly, wet your fingers with a little water
- If the dough is too sticky, sprinkle more flour on the work surface
- Shape the dough into a ball, wrap it in cling film and let it rest for 30 minutes at room temperature
- Dust your work surface with a little flour, take a lump of pasta dough the size of a large orange and press it with your fingertips
- We set the pasta machine to the widest setting and roll out a lump of dough through it
- If the pasta sticks, lightly dust it with flour
- Roll out the pasta dough again and fold the pasta in half and roll out the dough again in the pasta machine
- We repeat this process five or six times, once we fold it over and put it through the machine a few times, the dough will be smooth
- Lightly dust both sides of the pasta with a little flour each time you roll it
- As soon as we roll out the pasta, we immediately shape or cut it
- Pasta dries much faster than you might think
- We don’t leave them for more than a minute or two before cutting or shaping them
- If we want to prevent them from drying out, we put them on a damp and clean towel, which will prevent this
