What will we need

  1. 100 g of smoked belly
  2. 50 g of pecorino cheese
  3. 50 g Parmesan cheese
  4. 3 large eggs
  5. 350 g spaghetti
  6. 2 large garlic cloves (peeled and left whole)
  7. 50 g of butter
  8. Sea salt
  9. Freshly ground black pepper

Method

  1. Boil a large pot of water
  2. Finely chop 100 g of smoked belly
  3. Finely grate 50 g of pecorino cheese and 50 g of parmesan cheese and mix
  4. Beat 3 large eggs in a medium bowl and season with a little freshly grated black pepper. Put everything aside
  5. Add 1 teaspoon of salt to the boiling water
  6. Add 350g of spaghetti and when the water returns to the boil, cook covered for about 10 minutes or until al dente
  7. Crush 2 peeled cloves of garlic with a knife blade
  8. While the spaghetti is cooking, fry the belly with garlic

  1. 3 large egg yolks
  2. 40g Parmesan and extra for serving
  3. 150 g of English bacon
  4. 200 g of spaghetti
  5. Clove of garlic
  6. Extra virgin olive oil

Method

  1. Put the egg yolks in a bowl, finely grate the Parmesan, sprinkle with pepper, then mix well with a fork and set aside
  2. Cut the tough edges off the English bacon and set aside, then slice the meat
  3. Cook the spaghetti in a large pot of boiling salted water until al dente
  4. We will use the English bacon trimmings to brush the bottom of the pan (this will add a fantastic flavor, or we can use 1 tablespoon of oil instead)
  5. Then we turn on the temperature under the pan to medium high
  6. Peel the garlic and crush it with a knife

What will we need

  1. 500 g dried spaghetti
  2. 250 g stewed ham (cut into cubes)
  3. 75 g Pecorino cheese (finely grated)
  4. 3 egg yolks
  5. 2 whole eggs
  6. Garlic clove (peeled and crushed with a knife)
  7. Salt
  8. Crushed black pepper
  9. Olive oil

Method

  1. In a bowl, beat 2 whole eggs and 3 egg yolks until the egg mixture is uniform
  2. Stir in 75 g of pecorino cheese and lightly season with black pepper
  3. Set the mixture aside
  4. Put the spaghetti in heavily salted boiling water and cook according to the instructions on the package until al dente (a little hard)
  5. Toward the end of cooking, collect a cup of pasta water that we will use later
  6. Add a teaspoon of olive oil to the pan and let it heat up on medium heat

What will we need

  1. 500 g semi-coarse flour
  2. 3 large eggs
  3. ½ teaspoon of sea salt
  4. ½ tablespoon of extra virgin olive oil

Method

  1. Pour the flour onto a clean work surface and make a pile
  2. Add the eggs, olive oil and salt to the center and gently beat the eggs with a fork so as not to disturb the pile
  3. We gently start adding flour to the egg with our hands to gradually incorporate it
  4. We continue to work the dough with our hands so that it comes together into a smooth ball
  5. Knead the dough for 8 to 10 minutes
  6. The dough should be crumbly at first
  7. The dough may not seem to come together, but after 8-10 minutes of kneading it should be uniform and smooth
