These sweet coconut meringues are inspired by the traditional Brazilian sweet beijinhos de coco ! They are tender coconut balls made with only 4 ingredients in less than 30 minutes. Beijinhos literally means “kisses” in Portuguese. Sweetened condensed milk and butter are used as a base.

What will we need

  1. Can of sweetened condensed milk (approx. 400 g)
  2. 250 g of sweetened shredded coconut
  3. 25 g of butter
  4. A teaspoon of vanilla extract
  5. Cloves (for garnish optional)

Method

  1. Grease a baking tray with butter
  2. Mix condensed milk, coconut flakes and butter in a saucepan
  3. Let’s start cooking everything together at a medium temperature, stirring constantly, until the mixture thickens
  4. Cook for approximately 5-8 minutes
  5. When the coconut meringue dough is ready, take the pot off the heat
  6. Stir in the vanilla extract
  7. Then spread the mixture on a greased baking sheet and let it cool to room temperature
  8. Scoop the dough with a spoon and shape it into balls with your hands
  9. We then wrap the balls entirely in coconut
  10. Place them in decorative muffin cups and put a clove in the middle

The clove is only used as a decoration, it must be removed before consumption.

What will we need

For meringues

  1. 100 g of shredded coconut
  2. 200 g of powdered sugar
  3. 4 egg whites

For filling

  1. 200 g of low-fat cream cheese
  2. 2½ teaspoons of powdered sugar
  3. A teaspoon
  4. Fresh ginger about 5cm (really finely diced)
  5. A spoonful of ginger syrup
  6. 8 medium strawberries (sliced)

Method

  1. Preheat the oven to 110 degrees for the meringues
  2. Line two large trays with baking paper and set them aside
  3. Heat a non-stick frying pan over medium heat
  4. Add the coconut and fry it for a few minutes until golden brown and toasted
  5. Transfer it to a bowl and set aside
  6. Using a hand mixer, start beating the sugar with one egg white in a bowl for about 30 seconds
