Coffee Cake Bread Pudding

A simple dish made with Do You Bake? Coffee cake leftovers. This is perfect for breakfast and for dessert. Who knew leftovers could be so YUMMY!



    The day before :
    1. Cut your leftover Do You Bake? Coffee cake into 1 inch cubes. Spread the cubes onto a flat pan, with enough room in between (do not overlap cubes)
    To Assemble and Bake
    1. Preheat oven to 350 degrees F
    2. Lightly grease a 8x8 square baking dish
    3. Add coffee cake chunks to a large bowl and set aside
    4. In medium bowl, whisk together milk, eggs, sugar, cinnamon until well blended.  Pour mixture over coffeecake, pressing down coffeecake so that all the coffeecake has been soaked in the milk/egg mixture.
    5. Toss the raisins into the mixture (optional)
    6. Pour Coffee Cake Bread Pudding mix into baking dish and bake for 25 - 35 minutes until light and fluffy and baked throughout.
      ** If you forget to dry out your coffee cake cubes, you can cut them up into cubes and spread them onto a flat pan with enough room in between. Dry out in a 200 degree F oven, turning them every 10 minutes for 40 - 50 minutes.
